Description

This fruity cake with lemon cream is an absolute eye-catcher on every coffee table! I especially like to make it in the summer when the berries come fresh from the market. The combination of the fluffy dough, the creamy lemon cream and the juicy fruits is simply unbeatable. The apricots give the cake an additional fruity note. It can be prepared well and tastes delicious even the next day. A perfect cake for birthdays or just for enjoying!

Ingredients (11 ingredients)

  • 250 g soft Butter or margarine
  • 250 g Sugar
  • 1 Pck. Vanilla sugar
  • 6 piece Eggs
  • 300 g Flour
  • 1 Pck. Baking powder
  • 100 ml Milk
  • 1 kg Berries (blackberries and raspberries)
  • 425 ml Apricots (can)
  • 750 g Whipped cream
  • 1 pack Cake cream powder "Lemon Cream"

Preparation (11 steps)

Prepare baking sheet

Grease a baking sheet (approx. 35 x 40 cm) and sprinkle with breadcrumbs. Perform this step without Thermomix.

Prepare dough

Thermomix® Setting
3 min/keine/Speed 4

Put 250 g soft butter or margarine, 250 g sugar and 1 pack of vanilla sugar into the mixing bowl and mix for 3 min/speed 4 until creamy.

Stir in eggs

Thermomix® Setting
20 sec/keine/Speed 3

Add 6 eggs individually one after the other into the mixing bowl and stir in for 20 sec/speed 3 each time.

Stir in flour mixture and milk

Thermomix® Setting
1 min/keine/Speed 3

Mix 300 g flour and 1 pack of baking powder. Alternately add to the mixing bowl with 100 ml milk and stir in for 1 min/speed 3.

Bake dough

Spread the dough on the prepared baking sheet and bake in the preheated oven (electric oven: 200 °C/ convection oven: 175 °C / gas: level 3) for approx. 20 minutes. Perform this step without Thermomix.

Let the cake cool down

Let the baked cake cool completely. Perform this step without Thermomix.

Prepare fruit

Sort 1 kg berries, wash if necessary and pat dry. Use a fork to strip currants from the stems. Drain 1 can (425 ml) of apricots, collecting the juice. Cut apricots into wedges. Perform this step without Thermomix.

Whip cream until stiff

Thermomix® Setting
2 min/keine/Speed 3.5

Put 750 g whipped cream into the mixing bowl and whip with the butterfly for 2 min/speed 3.5 until stiff. Transfer cream.

Prepare lemon cream

If necessary, top up apricot juice with water to 200 ml. Put 1 packet of cake cream powder "Lemon Cream" into a mixing bowl. Add juice and stir with a whisk for approx. 1/2 minute. First stir in 4 tablespoons of cream, then fold in remaining cream. Perform this step without Thermomix.

Top the cake

Spread the lemon cream on the cooled cake. Distribute the prepared fruits (berries and apricot wedges) on the lemon cream. Perform this step without Thermomix.

Chill

Refrigerate the topped fruit cake for approx. 3 hours. Perform this step without Thermomix.
