Description

This fruity yoghurt bowl is a wonderfully refreshing start to the day! The combination of creamy yoghurt, sweet blueberries and fresh fruit is simply irresistible. I love how the frozen blueberries give the yoghurt a beautiful purple color. Perfect for a quick breakfast or a light brunch. The preparation is very easy and only takes a few minutes. Vary the toppings as you wish - nuts, seeds or coconut flakes also go very well with it. An absolute favorite recipe that is always well received by me!

Ingredients (9 ingredients)

  • 1 piece Vanilla bean
  • 300 g Frozen blueberries
  • 500 g Greek yoghurt
  • 4 tbsp Honey
  • 2 piece Bananas
  • 1 tsp Lemon juice
  • 4 piece Figs
  • 100 g Fresh blueberries
  • 6 tbsp Granola

Preparation (3 steps)

Prepare vanilla pulp and puree blueberries

Thermomix® Setting
20 sec/Speed 8

Cut the vanilla bean lengthwise and scrape out the pulp. Add 300 g frozen blueberries, 500 g Greek yoghurt, 4 tbsp honey and the vanilla pulp to the mixing bowl and puree for 20 sec./speed 8. If necessary, use the spatula to push down from the edge and puree again.

Prepare bananas

Peel 2 bananas, cut into slices and drizzle with 1 tsp lemon juice to prevent them from turning brown. Wash 4 figs and cut into slices or quarters. Sort 100 g fresh blueberries.

Arrange bowl

Divide the blueberry yoghurt into 4 bowls. Garnish with the prepared bananas, figs, blueberries and 6 tbsp granola. Add another spoonful of yoghurt if desired.
