Description

Gaisburger Marsch is a hearty stew with beef, Spätzle (German noodles), and potatoes. This recipe is adapted for the Thermomix® and offers easy preparation. Ideal as a main course for the cold season. The preparation time is about 3 hours and serves 4.

Ingredients (8 ingredients)

  • 1000 g Beef with bones
  • 2 Stück Onion
  • Garlic
  • 500 g Flour
  • 1 TL Salt
  • 5 Stück Eggs
  • 240 ml Water
  • 1000 g Potatoes

Cook meat

Thermomix® Setting
2 Stunden/212°F/Speed 1 212°F

Place 1 kg of beef with bones, 2 onions, and garlic in the mixing bowl and add 1.5 liters of water. Cook for 2 hours/100°C/speed 1.

Prepare Spätzle dough

Thermomix® Setting
2 min/Kneading speed

Add 500g flour, 1 tsp salt, 5 eggs and approx. 240ml water to the mixing bowl and process for 2 min./kneading stage to a viscous dough.

Cook Spätzle

Grate part of the dough into boiling salted water using a Spätzle plane, bring to a boil once. Transfer to a sieve with a slotted spoon and rinse with cold water. Proceed with the rest of the dough in the same way.

Cook potatoes

Peel 1 kg of potatoes and cut into pieces. Place the potato pieces in the mixing bowl, cover with salt water and cook for 15 min./100°C/speed 1.

Finish soup

Remove the meat from the soup, fish the onion and garlic pieces out of the soup. Cut the meat into small pieces, put it back into the soup together with the Spätzle and cooked potato pieces. Bring everything to a boil and season.
