Description

These vegetable fritters are a delicious and fun way to incorporate more vegetables into your diet. I have been preparing this recipe for years and it is always a success, especially among the little ones in the house. The combination of carrot, potato and broccoli, along with a touch of spring onion, creates a balanced and very appealing flavor. They are perfect as an appetizer, side dish or even as a light dinner. In addition, they are prepared in a short time and are an excellent option to take advantage of those vegetables that you have in the refrigerator. Go ahead and try them, you will love them!

Ingredients (10 ingredients)

  • 2 piece medium carrots
  • 1 piece medium potato
  • 3 trozos broccoli
  • 1 rama spring onion
  • 2 piece M eggs
  • 4 tbsp plain flour
  • 50 ml liquid cream or milk
  • 0.5 tsp baking powder
  • salt, oregano and paprika
  • oil for frying

Preparation (4 steps)

Grate and chop the vegetables

Place 2 medium carrots and 1 medium potato in the Thermomix bowl and grate for 5 seconds/Speed 5. Remove the grated vegetables from the bowl. Finely chop 3 pieces of broccoli and 1 sprig of spring onion. To reserve.

Squeeze out excess liquid

Place the grated vegetables in a strainer or between your hands and squeeze to remove excess liquid. This step is crucial so that the fritters are not soft.

Mix the ingredients

In a bowl, combine the grated and chopped vegetables with 2 M eggs, 4 tbsp of plain flour, 50 ml of liquid cream or milk, 1/2 tsp of baking powder, salt, oregano and paprika to taste. Mix well until a homogeneous mixture is obtained.

Cook the fritters

Heat plenty of oil for frying in a frying pan over medium heat. With a spoon, take portions of the dough and fry in the hot oil for approximately 2 minutes on each side, or until golden brown and cooked. Remove the fritters from the pan and place them on absorbent paper to remove excess oil.
