Diese Maraschino Kirsch-Schoko-Haferflocken-Cookies sind ein absoluter Genuss! Ich backe sie besonders gerne zur Weihnachtszeit, aber sie schmecken natürlich das ganze Jahr über. Die Kombination aus süßen Kirschen, Schokolade und knusprigen Haferflocken ist einfach unwiderstehlich. Die Zubereitung ist super einfach und geht schnell von der Hand, besonders mit dem Thermomix®. Die Cookies sind perfekt für den Nachmittagskaffee oder als süße Überraschung für Freunde und Familie. Sie sind nicht nur lecker, sondern auch ein echter Hingucker auf jedem Plätzchenteller!

Ingredients (13 ingredients)

  • 1 cup butter-flavored shortening
  • 0.5 cup white sugar
  • 0.5 cup light brown sugar
  • 2 piece eggs
  • 1 tsp vanilla extract
  • 2.5 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 2 cup rolled oats
  • 1 cup shredded coconut
  • 0.75 cup drained, dried, and chopped maraschino cherries
  • 0.5 cup semisweet chocolate chips

Preparation (6 steps)

Prepare the oven and baking sheets

Preheat the oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper. This step is done outside of the Thermomix.

Cream shortening and sugars

Place 1 cup butter-flavored shortening, ½ cup white sugar, and ½ cup light brown sugar into the Thermomix bowl. Mix for 2 Min./Stufe 3 until creamy and fluffy.

Add eggs and vanilla

30 Sec./Speed 3

Add 2 eggs and 1 teaspoon vanilla extract to the Thermomix bowl. Mix for 30 Sec./Stufe 3 until well incorporated.

Combine dry ingredients

Add 2 ½ cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, and ½ teaspoon salt to the Thermomix bowl. Mix for 30 Sec./Stufe 4 until an even dough forms.

Add oats, coconut, cherries, and chocolate chips

20 Sec./Linkslauf Speed 2 Reverse

Add 2 cups rolled oats, 1 cup shredded coconut, ¾ cup drained, dried, and chopped maraschino cherries, and ½ cup semisweet chocolate chips to the Thermomix bowl. Mix for 20 Sec./Linkslauf Stufe 2 until just mixed in.

Shape and bake the cookies

Scoop rounded tablespoons of dough onto the prepared baking sheets. Bake in the preheated oven until the edges are brown, 8 to 10 minutes. Let rest for 5 minutes, then transfer to a wire rack to cool. This step is done outside of the Thermomix.
