Description

These apple shortcrust pastry cookies from the Thermomix® are a simple and vegetarian cookie delight, ideal for the Christmas season or as a winter snack. The main ingredients are margarine, apples, flour and sugar. Preparation takes about 35 minutes and yields approximately 20 cookies. Perfect as finger food for breakfast, as a dessert or for cozy afternoons with the family.

Ingredients (8 ingredients)

  • 100 g Margarine (room temperature)
  • 60 g Sugar
  • 1 Päckchen Vanilla sugar
  • 2 Eggs
  • 250 g Flour
  • 2 TL Baking powder
  • 2 Apples
  • Baking paper

Preparation (6 steps)

Mix margarine, sugar and eggs

Place 100 g of room temperature margarine, 60 g of sugar and 1 packet of vanilla sugar, as well as 2 eggs in the mixing bowl and mix for 30 sec./speed 4 until a smooth mixture is formed. If necessary, use the spatula to scrape down from the edge.

Mix and stir in flour and baking powder

Add 250 g flour and 2 tsp baking powder to the mixing bowl and stir in for 20 sec./speed 3. If necessary, use the spatula to scrape down from the edge.

Prepare and fold in apples

10 sec/keine/Speed 2 Reverse

Peel, core and cut 2 apples into small pieces. Add the apple pieces to the mixing bowl and stir in for 10 sec./reverse direction speed 2.

Preheat oven

Preheat the oven to 220 °C top/bottom heat (convection: 200 °C).

Shape and bake cookies

Place the dough spoonful by spoonful on a baking sheet lined with baking paper. Bake the apple cookies in the preheated oven on the middle rack for about 10 minutes until golden brown.

Cool and serve

After baking, let the apple cookies cool on a wire rack and sprinkle with powdered sugar as desired.
