Description

These spiced vanilla biscuits are a delightful treat, perfect for the festive season or any special occasion. The warm spices like ginger and cinnamon add a comforting touch to the classic vanilla flavor. I've been making these for years, and they always disappear quickly! The biscuits are easy to prepare and decorate, making them a fun activity for the whole family. They're also great for gifting – package them in a pretty tin for a thoughtful homemade present. The recipe is simple, but the result is a batch of delicious, aromatic biscuits that everyone will love. These are best enjoyed with a cup of tea or coffee.

Ingredients (9 ingredients)

  • 200 g unsalted butter
  • 200 g golden caster sugar
  • 1 tsp vanilla extract
  • 1 piece egg
  • 375 g plain flour
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 75 g royal icing sugar
  • metallic sprinkles

Preparation (7 steps)

Combine butter, sugar, and vanilla

20 sec/Speed 4

Place 200g unsalted butter, 200g golden caster sugar, and 1 tsp vanilla extract into the mixing bowl. Mix for 20 Sec./Stufe 4 until well combined.

Add egg and mix

Thermomix® Setting
10 sec/Speed 3

Add 1 egg to the mixing bowl. Mix for 10 Sek./Stufe 3, scraping down the sides of the bowl with a spatula if needed.

Combine dry ingredients

In a separate bowl, mix together 375g plain flour, 1 tsp ground ginger, 1 tsp ground cinnamon, and ¼ tsp salt.

Add dry ingredients to wet ingredients

30 sec/Speed 3

Add the dry ingredients to the mixing bowl with the wet ingredients. Mix for 30 Sek./Stufe 3 until just combined. Do not overmix.

Bake the cookies

Preheat the oven to 190C/170C fan/gas 5. Arrange the cookies on baking sheets, leaving space between them, and bake for 12-15 mins until golden at the edges – the smaller ones may require less time, so watch closely. Cool for 10 mins on the sheets, then transfer to a wire rack to cool fully.

Prepare the icing

Mix 75g royal icing sugar with just enough water to make a thick icing.

Decorate the cookies

Spoon the icing into a piping bag fitted with a small round nozzle (or snip the end) and decorate the biscuits. Decorate with metallic sprinkles, then leave to dry for a couple of hours before sticking to the cake. Will keep in an airtight container for up to two days.
