Description

These vegan cookies with chocolate chips and walnuts are a crunchy delight on the outside and soft on the inside. I have been perfecting this recipe for years and they are always a success at home. The combination of dark chocolate with a touch of chopped nuts is simply irresistible. They are perfect to accompany an afternoon coffee or to enjoy as a sweet treat at any time of the day. Furthermore, they are very easy to prepare with the Thermomix®, which makes them an ideal option for those looking for a quick and delicious dessert. Go ahead and try them, you will love them!

Ingredients (9 ingredients)

  • 300 gramos Wheat flour
  • 2 cucharaditas Baking powder
  • 0.5 cucharadita Salt
  • 100 gramos Dark chocolate chips
  • 70 gramos Chopped walnuts
  • 100 gramos Sugar
  • 100 mililitros Vegetable milk
  • 50 mililitros Olive oil
  • 1 cucharadita Vanilla

Preparation (7 steps)

Mix dry ingredients

Place the wheat flour, baking powder and salt in the Thermomix glass. Mix for 5 seconds/speed 4.

Add sugar and mix

Add the sugar to the Thermomix glass with the dry ingredients. Mix for 5 seconds/speed 4.

Add liquid ingredients

Add the vegetable milk, olive oil and vanilla to the Thermomix glass. Mix for 20 seconds/speed 3.

Knead the dough

Knead the dough for 30 seconds/speed 4.

Incorporate chips and nuts

10 sec/Speed 2/Linkslauf Reverse

Add the dark chocolate chips and chopped walnuts to the Thermomix glass. Mix carefully for 10 seconds/speed 2/Reverse direction.

Bake the cookies

Preheat the oven to 180ºC. Line a baking tray with baking paper. With a spoon, place portions of dough on the tray, leaving space between each cookie. Bake for 10 minutes or until golden.

Cool and enjoy

Remove the cookies from the oven and let them cool on a wire rack before serving.
