Description

This cheesecake is a great low-carb alternative for anyone who wants to watch their diet but doesn't want to miss out on enjoyment. It is super easy and quick to prepare, as all ingredients are simply placed in the mixing bowl. The cake is wonderfully creamy and slightly sour due to the lemon juice and zest. Perfect for coffee time or as a sweet finish after a meal. Thanks to the birch sugar, it is also suitable for diabetics. An absolute favorite recipe that is always well received!

Ingredients (6 ingredients)

  • 500 g Low Fat Quark
  • 200 ml Milk - low fat
  • 3 piece Eggs - Size M
  • 1 Pck. Vanilla pudding powder - for cooking
  • 80 g Birch sugar - Xylitol
  • 0.5 piece Lemon - juice and zest

Preheat oven

Preheat the oven to 175 degrees circulating air.

Mix ingredients

20 sec/Speed 4

Put 500g low fat quark, 200ml low-fat milk, 3 eggs (size M), 1 packet of vanilla pudding powder (for cooking), 80g birch sugar (Xylitol) and the juice and zest of half a lemon into the mixing bowl and mix for 20 sec./speed 4.

Bake dough

Pour the dough into a round silicone mold (Ø 17 – 20 cm) and bake in the preheated oven for approx. 50 minutes.

Cool and serve

Let the cake cool down and then put it in the refrigerator for at least 2 hours. Then carefully remove from the mold and serve optionally with icing sugar.
