Description

This berry quark cake without base is an absolute delight for anyone who likes it light and fruity. I especially like to make it in the summer when the raspberries come fresh from the garden. The cake is not only incredibly delicious, but also low carb, making it a perfect choice for a conscious diet. The protein powder gives it a pleasant vanilla note. The preparation is very simple and succeeds with the Thermomix® in no time. A great cake for birthdays or just for coffee!

Ingredients (7 ingredients)

  • 3 piece Eggs
  • 100 g soft Butter
  • 400 g Low-fat Quark
  • 1 Prise(n) Cinnamon
  • 10 ml Liquid sweetener
  • 25 g Protein powder vanilla flavour
  • 125 g Raspberries

Preparation (6 steps)

Separate eggs and beat egg whites until stiff

Separate eggs. Place the egg white in a separate bowl and set aside. Rinse mixing bowl.

Prepare egg yolk mixture

Thermomix® Setting
20 sec/Speed 4

Add egg yolks, soft butter, low-fat quark, cinnamon, liquid sweetener and protein powder vanilla flavour to the mixing bowl and mix for 20 sec./speed 4.

Fold in beaten egg whites

Carefully fold the stiffly beaten egg white into the egg yolk mixture.

Bake dough

Fill the dough into a well-greased springform pan and bake in a preheated oven at 150°C circulating air for approx. 50 minutes. After baking, leave the cake in the switched off oven for 15 minutes.

Prepare raspberry puree

Thermomix® Setting
15 sec/Speed 8

Add 100 g raspberries to the mixing bowl and puree for 15 sec./speed 8. Then strain through a sieve.

Decorate cake

Spread the cooled cheesecake with the raspberry puree and decorate with the remaining 25 g raspberries.
