A moist carrot cake.
Ingredients (9 ingredients)

250 g Carrots

150 g Walnuts, chopped

4 piece Eggs
-
200 g Sugar
-
200 ml Oil, neutral
-
1 Pck. Vanilla sugar

1 pinch Salt
-
300 g Flour
-
1 Pck. Baking powder
Preparation (6 steps)
Chop nuts
Put walnuts into the mixing bowl and chop for 5 sec./speed 5. Transfer and set aside.
Chop carrots
Put carrots into the mixing bowl and chop for 5 sec./speed 5. Scrape down with the spatula.
Mix eggs, sugar and oil
Put eggs, sugar, oil, vanilla sugar and salt into the mixing bowl and mix for 3 min./speed 3.
Mix flour and baking powder and stir in
Add flour and baking powder and stir in for 20 sec./speed 3.
Fold in carrots and nuts
Add chopped carrots and walnuts and fold in for 15 sec./reverse/speed 2.
Baking
Pour the batter into a greased and floured cake tin and bake in a preheated oven at 180°C top/bottom heat for approx. 40-50 minutes.
