Description

This apple and cream cake is true comfort food, perfect for a delicious snack or a Sunday dessert. Its soft texture and enveloping aroma of cinnamon make it irresistible. Preparing it is very simple and quick, especially with the help of our trusted Thermomix®! I often make it when I have unexpected guests, because it is always a guaranteed success. The apples, cut thinly, melt in the mouth, while the fresh cream gives a unique creaminess. A touch of icing sugar on top makes it even more inviting. Try it, you won't regret it!

  • Fresh cream for whipping

Preparation of the apples

Wash, peel and remove the core from the apples. Cut the pulp into thin slices (maximum 5 mm).

Prevent apple oxidation

Put the apple slices in a container with the juice of half a lemon to prevent them from browning. Mix gently.

Whisk eggs and sugar

In the Thermomix bowl, insert the eggs and sugar. Whisk for 3 Min./Speed 4.

Add aromas and cream

Add the grated zest of half a lemon and cinnamon powder to the bowl. Pour in the cold fresh cream and mix for 1 Min./Speed 3.

Incorporate flour and baking powder

Thermomix® Setting

Add the baking powder and sifted flour to the bowl. Mix for 30 Sec./Speed 3.

Add the apples

Add half of the sliced apples (the smaller or broken pieces) to the bowl and mix gently with the spatula for 10 Sec./Reverse/Speed 2.

Transfer to the mold and decorate

Grease and flour a 24/26 cm diameter mold. Pour the mixture into the mold and decorate the surface with the remaining apple slices, arranging them in a radial pattern.

Baking in the oven

Bake the cake at 180°C in the central rack of the oven, in static mode for about 40 minutes. Do the toothpick test to check if it is cooked.

Sprinkle with icing sugar

When the cake has cooled, sprinkle the surface with icing sugar and serve, cut into slices.
