Description

Stuffed baked apples with vanilla sauce are a Christmas dessert that is easy to prepare with the Thermomix®. The main ingredients are apples, marzipan, almonds, raisins and brown sugar. The recipe is vegetarian and is suitable as a festive dessert or warm main course in winter. The preparation time is 50 minutes for 4 servings. Ideal for the whole family or as a crowning finale to a festive menu.

Ingredients (13 ingredients)

  • 50 g chopped almonds
  • 4 Stück large apples
  • 150 ml apple juice
  • 80 g marzipan
  • 3 EL brown sugar
  • 0.5 TL cinnamon
  • 2 EL raisins
  • 2 EL butter
  • 250 ml milk
  • 1 TL starch
  • 2 Stück egg yolks
  • 1 Stück vanilla bean
  • 3 EL sugar

Preparation (8 steps)

Roast almonds

Roast 50 g of chopped almonds in a pan without fat and let them cool. Perform this step outside of the Thermomix.

Prepare apples

Preheat the oven to 180 °C top/bottom heat. Wash 4 large apples (e.g. Boskop or Cox Orange) thoroughly and core them with an apple corer. Perform this step outside of the Thermomix.

Prepare filling

Knead 80 g of marzipan with 3 tbsp of brown sugar, 0.5 tsp of cinnamon, the roasted almonds and 2 tbsp of raisins and press ¼ into each apple. Place a flake of 2 tbsp of butter on each apple. Perform this step outside of the Thermomix.

Bake apples

Place the apples in a baking dish (approx. 25 x 20 x 5 cm). Pour 150 ml of apple juice into the dish and place the apples in the oven for 40 minutes. In between, add apple juice if necessary. Perform this step outside of the Thermomix.

Stir starch

Stir 3 tbsp of milk with 1 tsp of starch in a cup until smooth. Stir in 2 egg yolks and set aside. Perform this step outside of the Thermomix.

Prepare vanilla sauce

Put 220 ml milk, 3 tbsp sugar and 1 vanilla bean, split lengthwise, into the mixing bowl. Cook for 7 min./90°C/speed 2.

Thicken vanilla sauce

Thermomix® Setting
2 min/176°F/Speed 3 80

Remove vanilla bean. Add the stirred starch-egg yolk mixture and stir in for 2 min./80°C/speed 3 until the sauce thickens.

Serve

Take the baked apples out of the oven, place them on plates and serve with vanilla sauce. Perform this step outside of the Thermomix.
