Description

Stuffed Pide is a hearty main course from the category of bread and rolls, prepared in the Thermomix®. The main ingredients are flour, milk, yogurt, and yeast. With a preparation time of 60 minutes, it yields 4 servings. The recipe is ideal for a warm family meal.

Ingredients (20 ingredients)

  • 500 g Flour, Type 405
  • 250 ml Milk
  • 50 g Yogurt, 10% fat
  • 21 g Fresh yeast
  • 10 g Salt
  • 50 ml Olive oil
  • 0.5 TL Sugar
  • 1 Egg, size M
  • 1 nach Belieben White or black sesame seeds
  • 400 g Whole canned tomatoes
  • 250 g Ground beef
  • 180 g Red bell pepper
  • 4 Spring onions
  • 1 Garlic clove
  • 1 TL Salt
  • 1 EL Olive oil
  • 1 TL Thyme, dried
  • 0.5 TL Cumin
  • 0.125 TL Black pepper, freshly ground
  • 0.125 TL Chili flakes

Preparation (8 steps)

Prepare the dough

2 min/99°F/Speed 1, 10 sec/Speed 2 99°F

Pour 250 ml of milk into the mixing bowl and heat for 2 min./37°C/speed 1. Add 50 g yogurt, 21 g fresh yeast, 10 g salt and 1/2 tsp sugar and mix for 10 sec./speed 2.

Knead the dough

Add 500 g flour and 50 ml olive oil and knead for 2 min./kneading function.

Let the dough rise

Remove the dough from the mixing bowl, form a ball and cover with a clean kitchen towel. Let rise in a warm place for about 30 minutes, until doubled in size.

Chop spring onions and garlic

Place the white parts of the spring onions in the mixing bowl and chop for 3 sec./speed 5. Transfer. Cut the green parts into coarse rings and set aside. Place the garlic clove in the mixing bowl and chop for 3 sec./speed 7.

Chop bell pepper

Place the bell pepper in the mixing bowl and chop for 4 sec./speed 4. Transfer.

Prepare the filling

Brown the ground beef in a pan with 1 tbsp olive oil. Add white spring onion rings and diced bell pepper and sauté for 5 minutes. Add garlic, 1 tsp salt, 1 tsp thyme, 1/2 tsp cumin, 1/8 tsp black pepper and 1/8 tsp chili flakes and stir. Add whole canned tomatoes (roughly chopped) and simmer for 5 minutes.

Shape and bake the Pide

Preheat oven to 200°C top/bottom heat. Divide the dough into quarters and roll out into ovals. Spread the filling on the dough, fold up the edges and form into a boat shape. Whisk 1 egg and brush the edges. Sprinkle with sesame seeds. Bake on a baking sheet lined with baking paper for 20 minutes.

Serve

Sprinkle with green spring onion rings and serve hot.
