Description

These stuffed sweet potatoes are a hearty and satisfying breakfast that is also wonderful as a light lunch or dinner. The sweet potatoes are baked in the oven, hollowed out and filled with an egg, which then sets in the oven. The combination of the sweetness of the potato, the salty egg and the fresh herb cream cheese is simply delicious. I like to make this dish on the weekend for an extensive brunch. It is super easy to prepare and tastes great to the whole family. If you like, you can add some diced ham or grated cheese. An absolute favorite recipe!

Ingredients (7 ingredients)

  • 2 piece large Sweet potatoes
  • 2 piece Spring onions
  • 4 piece Eggs
  • to taste Salt
  • to taste Pepper
  • 0.5 bunch Parsley
  • 200 g Cottage cheese

Preparation (8 steps)

Prepare sweet potatoes

Wash the sweet potatoes thoroughly, pat dry and halve lengthwise. Place the sweet potato halves on a baking sheet lined with baking paper.

Bake sweet potatoes

Bake the sweet potatoes in a preheated oven at 200°C for 30-40 minutes until soft.

Prepare spring onions

Wash the spring onions and cut into fine rings.

Hollow out the sweet potatoes

Remove the sweet potatoes from the oven and hollow them out a little (just enough to fit 1 egg inside).

Fill in and season eggs

Crack the eggs into the wells, season with salt and pepper and sprinkle with the chopped spring onions.

Let eggs set

Bake the stuffed sweet potatoes in the oven for another 15 minutes until the eggs have set.

Chop parsley

Wash the parsley, shake dry and place in the mixing bowl. Chop for 3 sec./level 5.

Arrange and serve

Arrange the finished sweet potatoes with some cream cheese and sprinkle with the chopped parsley. Serve immediately.
