Description

This vegetarian vegetable and potato casserole from the Thermomix® is a hearty main course with potatoes, broccoli, peppers, and carrots. Preparation takes about 75 minutes, with 45 minutes of active work. The recipe is designed for 6 servings and is ideal as a healthy family meal. The casserole is baked in the oven and is a delicious way to incorporate lots of vegetables into your diet.

  • 700 g firm potatoes
  • 1 Kopf Broccoli
  • 2 Stück Bell peppers - red and yellow
  • 300 g Carrots
  • 30 g Butter
  • 30 g Flour
  • 250 ml Milk
  • 250 ml Vegetable broth
  • 100 g Grated cheese
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 1 TL Paprika powder

Preparation (10 steps)

Prepare potatoes, broccoli, peppers, and carrots

Preheat the oven to 200 degrees Celsius (top and bottom heat). Peel 700 g of firm potatoes and cut into small pieces. Divide 1 head of broccoli into florets. Cut 2 bell peppers (red and yellow) into small pieces. Cut 300 g carrots into slices.

Pre-cook potatoes, broccoli, and carrots

Add 1000 ml of water to the mixing bowl and bring to a boil for 10 min./100°C/Stufe 1.

Add potatoes to the simmering basket

Insert the simmering basket and add the cut potatoes. Cook for 6 min./100°C/Stufe 1.

Add broccoli and carrots

After 2 minutes (i.e., after a total of 4 minutes of cooking time for the potatoes), add the broccoli florets and carrot slices to the simmering basket with the potatoes and cook for the remaining 4 min./100°C/Stufe 1.

Drain vegetables

After the cooking time, remove the simmering basket with the vegetables and empty the water from the mixing bowl.

Prepare roux

Add 30 g of butter to the mixing bowl and melt for 2 min./50°C/Stufe 1.

Add flour

Add 30 g flour and sauté for 2 min./100°C/Stufe 2.

Prepare sauce

Thermomix® Setting

Add 250 ml milk and 250 ml vegetable broth and stir in for 5 min./90°C/Stufe 3. Season the sauce with 1 tsp paprika powder, salt, and pepper.

Layer casserole

Place the pre-cooked vegetables and pepper pieces in a casserole dish and mix with the sauce from the mixing bowl.

Add cheese and bake

Sprinkle the vegetable casserole with 100 g of grated cheese (e.g., Gouda) and bake in the preheated oven for 30 minutes.
