Description

This Genoese sweet, rich in raisins and candied fruit, is a real treat for the palate! I often prepare it during the Christmas holidays, because its intoxicating scent fills the house with joy. The preparation is a bit long, but it is absolutely worth it. The texture is soft and slightly moist, and the flavor is a perfect balance between sweet and slightly tart, thanks to the presence of candied fruit. Perfect to enjoy with a cup of hot tea or a glass of sweet wine. A true comfort food for cold days!

Ingredients (12 ingredients)

  • 160 g raisins
  • 50 g candied orange peel
  • 50 g candied citron
  • 30 g pine nuts
  • 100 g butter
  • 100 g sugar
  • 1 piece eggs
  • 50 ml milk
  • 10 g baking powder
  • 300 g 00 flour
  • water
  • fine salt

Preparation (13 steps)

Soaking the raisins

Put 160 g of raisins in a bowl and cover them with water. Leave to soak for 30 minutes. After the time has elapsed, drain the raisins and set them aside.

Preparation of the candied fruit and pine nut mix

In a large bowl, combine the drained raisins, 50 g of candied orange peel, 50 g of candied citron and 30 g of pine nuts. Mix well to obtain a homogeneous mixture.

Processing butter and sugar

Put 100 g of softened butter and 100 g of sugar in the Thermomix bowl. Work together for 20 Sec./Stufe 4 until you get a soft and homogeneous mixture.

Incorporating the egg

Add 1 egg to the bowl and mix for 10 Sek./Stufe 3 to incorporate it well into the mixture.

Adding the milk

Pour 50 ml of milk into the bowl and mix for 5 Sek./Stufe 2 to blend everything together.

Incorporating the flour and salt

30 sec/Speed 4

Gradually add 300 g of 00 flour to the bowl and a pinch of fine salt. Mix for 30 Sek./Stufe 4, using the spatula to blend all the ingredients well.

Adding the yeast

Sift 10 g of baking powder and add it to the bowl. Mix for 10 Sek./Stufe 3 to distribute it evenly.

Incorporating the mix of raisins, candied fruit and pine nuts

Add the mix of raisins, candied fruit and pine nuts to the bowl. Gently mix for 20 Sek./Linkslauf Stufe 2 to incorporate everything into the dough.

Processing and folding the dough

Transfer the mixture to a floured surface and work it to flatten it. Sprinkle it with flour, then fold it over itself. Repeat this operation twice.

Forming the loaf

Form a rounded loaf, transfer it to a baking sheet covered with parchment paper and flatten it slightly with your hands until you get a disc about 3 cm high and about 10 cm in diameter.

Decoration of the loaf

Make diamond-shaped incisions on the surface of the loaf with a knife.

Baking in the oven

Bake in a preheated fan oven at 160 °C for about 50 minutes.

Cooling and serving

Once ready, let it cool completely and then serve the sweet.
