Description

These gingerbread muffins with cream cheese topping are a festive Christmas dessert, prepared in the Thermomix®. The main ingredients are margarine, eggs, brown sugar, flour and gingerbread spice. The preparation takes a total of 55 minutes and yields 12 servings. Ideal for the festive coffee table or as winter finger food.

  • 50 g Margarine
  • 2 Eggs
  • 100 g Brown sugar
  • 250 g Flour
  • 1 TL Baking powder
  • 2 TL Gingerbread spice
  • 125 ml Milk
  • 200 g Cream cheese Balance
  • 50 g Icing sugar
  • 25 g White chocolate

Preparation (9 steps)

Preheat oven and prepare muffin tin

Preheat the oven to 200 °C (convection: 180 °C). Grease the muffin tin cups or line with paper liners. This is a preparation step without Thermomix setting.

Mix margarine, eggs and sugar

Put 125 g margarine (at room temperature), 2 eggs and 100 g brown sugar into the mixing bowl and mix for 2 min/speed 4 until a smooth mixture is formed.

Prepare flour mixture

Thoroughly mix 250 g flour, 1 tsp baking powder and 2 tsp gingerbread spice in a separate bowl. This is a preparation step without Thermomix setting.

Stir in flour mixture and milk

Thermomix® Setting

Add the prepared flour mixture and 125 ml milk to the mixing bowl with the remaining ingredients and stir in for 30 sec/speed 3. Use the spatula to scrape down from the edge and, if necessary, stir for another 10 sec/speed 3.

Fill dough into muffin tins

Distribute the dough evenly among the prepared muffin tins. This is a preparation step without Thermomix setting.

Bake muffins

Bake the muffins in the preheated oven for about 20 minutes. This is a baking step outside of the Thermomix.

Prepare cream cheese frosting

Thermomix® Setting

Put 200 g cream cheese Balance (0.2% fat), 50 g margarine (at room temperature) and 50 g icing sugar into the mixing bowl and mix for 1 min/speed 4 until a smooth cream is formed. Refrigerate the cream until ready to use.

Grate chocolate

Coarsely grate 25 g white chocolate with a vegetable peeler or grater. This is a preparation step without Thermomix setting.

Decorate muffins

Spread the cooled muffins with the cream cheese cream and sprinkle with the grated chocolate. This is a decoration step without Thermomix setting.
