Description

These creamy gorgonzola gnocchi are a true comfort food! The recipe is simple but the result is a rich and flavorful dish, perfect for a dinner with friends or a family lunch. I often prepare them when I want something special, especially in autumn, when gorgonzola is at its best. The creaminess of the sauce goes perfectly with the softness of homemade gnocchi. A tip? Serve them with a sprinkling of black pepper and a few fresh basil leaves for a touch of extra color and fragrance. Ideal for those who love strong and enveloping flavors!

Ingredients (8 ingredients)

  • 1 kg floury potatoes
  • 300 g flour
  • 1 q.b. fine salt
  • 200 ml milk
  • 100 ml cooking cream
  • 150 g gorgonzola
  • 1 q.b. black pepper
  • 1 qualche foglia basil

Preparation (9 steps)

Boiled potatoes

Thermomix® Setting
35 min/Varoma/Speed 1 Varoma

1 kg of potatoes, preferably floury, with the peel, in the basket and 1 liter of water in the jug. Cook for 35 Min./Varoma/Stage 1.

Mashed potatoes

Drain the potatoes and let them cool slightly. Peel them and mash them with a potato masher on a pastry board where we will have placed 300 g of flour and a pinch of salt.

Gnocchi dough

Knead by hand until you get a soft but not sticky dough.

Shape gnocchi

Divide the dough into portions and form thick strands of about 1.5 cm, to then be cut into small pieces to obtain the gnocchi.

Gnocchi scoring

Score the gnocchi with a gnocchi board or a fork, and place them as you go on a lightly floured surface.

Gnocchi cooking

Cook the gnocchi in abundant boiling salted water.

Gorgonzola sauce

Thermomix® Setting
7 min/140°F/Speed 2 60

Pour 200 ml of milk and 100 ml of cooking cream into the jug. Add 150 g of gorgonzola in pieces. Cook for 7 Min./60°C/Stage 2.

Mix sauce and gnocchi

Drain the gnocchi as they rise to the surface using a slotted spoon and pour them directly into the jug with the gorgonzola sauce. Add a sprinkling of black pepper and mix gently with the spatula to mix everything together.

Serve

Serve the gorgonzola gnocchi hot, garnished with fresh basil leaves to taste.
