Description

This recipe for goose breast fillet with thyme crust is a feast for the senses! The tender fillets, covered with an aromatic crust of thyme, lemon and breadcrumbs, are a real eye-catcher and taste simply delicious. I especially like to make this dish for Christmas or New Year's Eve, as it is something special. The preparation is a bit more complex, but the result is worth it. A fine sauce and side dishes of your choice go well with it. A tip: the dish can be prepared well in advance, so you have less stress on the holiday itself.

Ingredients (15 ingredients)

  • 2 piece Goose breasts on the bone
  • 3 piece Onions
  • 1 piece Carrot
  • 1 tbsp Tomato paste
  • to taste Salt
  • 8 Stiele Thyme
  • 2 piece Juniper berries
  • 0.5 piece Organic lemon
  • 40 g Soft butter
  • 60 g Breadcrumbs
  • to taste Pepper
  • 2 tbsp Gin
  • 1 tsp Cornstarch
  • 2 tbsp Goose fat
  • 750 ml Water

Preparation (18 steps)

Prepare goose bones

Cut the goose breast fillets from the bone and carefully peel the skin from the meat. Roughly chop the goose bones and set aside.

Render goose fat

10 min/248°F/Speed 1 120

Place the goose skin in the mixing bowl and render for 10 min./120°C/speed 1 until the fat has come out. Transfer the goose fat, except for 2 tablespoons, to a container with a lid and set aside.

Prepare goose stock

5 min/Varoma/Speed 1 Varoma

Place the goose bones in the mixing bowl and sauté for 5 min./Varoma/speed 1.

Chop vegetables

Peel, roughly chop 1 onion and the carrot and place in the mixing bowl. Chop for 5 sec./speed 5.

Sauté vegetables

Add 1 tablespoon of tomato paste and sauté for 3 min./120°C/speed 1.

Add 750 ml water and 1 teaspoon salt and simmer for 45 min./100°C/speed 1, skimming off any foam that forms from the stock with the spatula.

Prepare thyme topping

Wash and shake dry 8 sprigs of thyme. Place 2 juniper berries in the mixing bowl and chop for 5 sec./speed 8.

Grate lemon zest

Wash ½ organic lemon in hot water, pat dry and finely grate the zest. Cut the lemon into slices and set aside.

Prepare breadcrumb mixture

Place 40 g soft butter, 60 g breadcrumbs, lemon zest, thyme, juniper berries, some salt and pepper in the mixing bowl and mix for 20 sec./speed 4.

Prepare sauce

Peel the remaining 2 onions, cut into wedges and place in the mixing bowl together with the lemon slices. Chop for 5 sec./speed 4.

Sauté sauce

3 min/248°F/Speed 1 120

Add 1 tablespoon of goose fat and lightly sauté for 3 min./120°C/speed 1.

Simmer sauce

Thermomix® Setting
10 min/212°F/Speed 1 100

Add 300 ml goose stock and simmer for 10 min./100°C/speed 1. Then let cool and degrease.

Fry goose fillets

Rub the goose fillets with salt and pepper. Heat 1–2 tablespoons of goose fat in a pan. Fry the fillets in it for about 5 minutes on each side. Place in a shallow roasting pan and cook in the preheated oven (electric oven: 180°C/fan oven: 160°C) for about 20 minutes.

Deglaze roasting juices

Deglaze the roasting juices in the pan with 2 tablespoons of Gin and add to the sauce in the mixing bowl. Mix for 5 sec./speed 3.

Apply thyme crust

Spread the breadcrumb mixture on the fillets and press down carefully.

Bake fillets

Turn on the oven grill. Grill the fillets for about 3 minutes until crispy. Remove and let rest for about 5 minutes.

Thicken sauce

Thermomix® Setting
5 min/212°F/Speed 2 100

Bring the sauce to the boil in the mixing bowl for 5 min./100°C/speed 2. Mix 1-2 teaspoons of cornstarch with 2 tablespoons of cold water and use to thicken the sauce. Mix for 10 sec./speed 3 and season to taste.
