Description

This hearty beef goulash is an absolute classic and warms you from the inside on cold days. The secret lies in the long braising time, which makes the meat butter-tender and fully develops the flavors. I especially like to cook it in autumn and winter when it's uncomfortable outside. With dumplings or potatoes, it is a filling and hearty dish for the whole family. If you like, you can add a dash of cream shortly before the end of the cooking time. A real comfort food!

Ingredients (11 ingredients)

  • 2 tbsp Clarified butter
  • 4 piece Onion(s), diced
  • 2 tbsp Tomato paste
  • 1 piece Carrot(s), diced
  • 50 g Celeriac, diced
  • 0.7 Liter Red wine
  • 1 kg Beef, diced
  • 300 ml Beef broth
  • 1 tsp Paprika powder, mild, heaped
  • 1 tsp Paprika powder, hot, heaped
  • Sauce thickener

Preparation (9 steps)

Prepare onions, carrot and celery

Peel and quarter 4 large onions. Peel 1 carrot and 50 g celeriac and cut into coarse pieces.

Chop vegetables

Put onions, carrot and celery into the mixing bowl and chop for 5 sec./level 5. If necessary, use the spatula to push down from the edge.

Sauté vegetables

Add 2 tbsp clarified butter and sauté for 3 min./120°C/level 1.

Sauté tomato paste

2 min/248°F/Speed 1 120

Add 2 tbsp tomato paste and sauté for 2 min./120°C/level 1.

Sauté paprika powder

Thermomix® Setting
30 sec/248°F/Speed 1 120

Add 1 tsp, heaped paprika powder, mild and 1 tsp, heaped paprika powder, hot and sauté for 30 sec./120°C/level 1. Attention: Do not let it burn!

Deglaze and add meat

5 min/212°F/Speed 1 100

Deglaze with 0.7 liters red wine and 300 ml beef broth and add 1 kg diced beef. Bring everything to the boil for 5 min./100°C/level 1.

Simmer goulash

120 min/203°F/Speed 1 95

Put on the lid and simmer for 120 min./95°C/level 1.

Thicken goulash (optional)

3 min/212°F/Speed 2 100

If the sauce is too liquid, stir 1 tbsp cornstarch with some cold water and add to the mixing bowl. Simmer for 3 min./100°C/level 2.

Season with salt and pepper. Remove bay leaves before serving.
