Description

This leek-cheese-gratin with ham is a hearty and warming dish that tastes particularly good in the colder season. The leeks are first blanched and then covered with a creamy cheese sauce before being baked in the oven with grated cheese and ham. I like to make this dish when I have guests because it is easy to prepare and always well received. The combination of the mild leeks, the spicy cheese and the salty ham is simply irresistible. A great main course for a festive meal or a cozy brunch!

Ingredients (9 ingredients)

  • 12 piece Leek (leek)
  • to taste Salt
  • 225 g Mountain cheese
  • 15 g Butter
  • 15 g Flour
  • 200 ml Broth
  • 100 g Whipping cream
  • to taste Pepper
  • 8 slice Farmhouse ham (approx. 15 g each)

Preparation (8 steps)

Prepare leeks

Clean 12 thin leek stalks, wash and cut each stalk to approx. 18 cm long. Bring water to a boil with salt in a saucepan. Add leeks to the boiling salt water and blanch for approx. 4 minutes. Then drain well.

Grate cheese

Put 225 g mountain cheese in pieces into the mixing bowl and chop for 10 sec./speed 8. Transfer and set aside.

Prepare roux

Put 15 g butter in the mixing bowl and melt for 2 min./50°C/speed 1.

Sauté roux

Add 15 g flour and sauté for 2 min./100°C/speed 1.

Prepare sauce

Add 200 ml broth and 100 g whipping cream and cook for 5 min./90°C/speed 2.

Stir in cheese

Thermomix® Setting

Add 75 g grated cheese, salt and pepper and stir in for 1 min./60°C/speed 2.

Prepare ham

Halve 8 slices of farmhouse ham lengthwise.

Prepare gratin

Spread the leek sticks on an oiled baking sheet. Pour the cheese sauce over it, sprinkle with the remaining cheese and spread the ham on top. Bake in a preheated oven (electric oven: 200 °C/ convection: 175 °C/ gas: level 3) for 20–25 minutes. Remove and arrange on 4 plates.
