Description

This gratinated onion soup is a real classic and warms you up wonderfully on cold days. I especially like to make it in autumn and winter, when the onions are in season. The sweetness of the caramelized onions harmonizes perfectly with the spicy cheese and the crispy baguette. A dash of dry white wine gives the soup a fine note. Served in ovenproof bowls and topped with cheese, it is a real eye-catcher and tastes simply delicious. Ideal as a starter or light main course.

Ingredients (9 ingredients)

  • 600 g Onions
  • 2 tbsp Butter
  • 1 tbsp Flour
  • 100 ml dry White wine
  • 1 l Meat broth - or vegetable broth
  • Salt and pepper
  • 8 slice Baguette
  • 100 g grated Cheese - Gruyère or Emmentaler
  • Thyme

Preparation (7 steps)

Prepare onions

Peel 600g onions, halve and cut into rings.

Sauté onions

Thermomix® Setting
10 min/248°F/Speed 1 120

Add 2 tbsp Butter to the mixing bowl and melt for 3 min./120°C/speed 1. Add the sliced onions and sauté for 10 min./120°C/speed 1 without the measuring cup.

Cook soup

Thermomix® Setting
15 min/212°F/Speed 1 100

Add 1 tbsp Flour to the onions and sauté for 1 min./100°C/speed 1. Deglaze with 100 ml dry White wine and add 1 L meat or vegetable broth. Simmer for 15 min./100°C/speed 1.

Season soup

10 sec/Speed 3

Season the soup with Salt and Pepper and stir for 10 sec./speed 3.

Prepare baguette

Preheat the oven to 220 degrees top and bottom heat. Place 8 slices of Baguette on a rack and brown in the oven while preheating, or toast the slices alternatively.

Gratinate soup

Divide the soup into 3 ovenproof soup bowls and top with two Baguette slices each. Sprinkle with 100 g grated Cheese (Gruyère or Emmentaler) and gratinate in the oven for 5 minutes.

Serve

Garnish the gratinated onion soup with Thyme and serve.
