Description

These ground venison and chestnut wraps are a real eye-catcher and taste fantastic! The recipe is super quick to prepare and perfect for a cozy evening with friends or as an unusual appetizer. The spicy ground venison harmonizes wonderfully with the sweet chestnuts and the fresh hoisin sauce. The crisp iceberg lettuce leaves provide the necessary crunch. I especially like to make these wraps in the fall when chestnuts are in season. An absolute favorite recipe that is always a hit at any party!

Ingredients (15 ingredients)

  • Vegetable oil, for frying
  • 500 Gramm Ground venison
  • 200 Gramm Cooked chestnuts, chopped
  • 1 Onion
  • 2 Garlic cloves
  • 80 Milliliter Hoisin sauce
  • 2 Esslöffel Soy sauce
  • 1 Esslöffel Rice vinegar
  • 1 Esslöffel Sriracha sauce
  • 2 Teelöffel Grated ginger
  • 2 Spring onions, finely chopped
  • Fresh cilantro
  • Chili flakes
  • Sesame seeds
  • 1 großer Kopf Iceberg lettuce

Preparation (6 steps)

Chop the onion and garlic

Thermomix® Setting

Peel and halve the onion and place it in the mixing bowl with the garlic cloves. Chop for 3 sec./speed 5. Use the spatula to scrape everything down from the side.

Sauté onion and garlic

Sauté the chopped onion and garlic with vegetable oil in a pan until translucent. Fry the meat well in the pan, stirring regularly so that it becomes fine and does not "clump".

Prepare the sauce

Thermomix® Setting

Add hoisin sauce, soy sauce, rice vinegar, Sriracha sauce and grated ginger to the mixing bowl and simmer for 5 min./100°C/speed 2.

Add chestnuts

Thermomix® Setting
3 min/212°F/Linkslauf Speed 1 100 Reverse

Add the fried ground venison and chopped chestnuts to the mixing bowl and stir in for 3 min./100°C/reverse/speed 1. Season with salt and pepper.

Prepare the iceberg lettuce

Halve the iceberg lettuce in the middle, remove the stalk and carefully remove the individual leaves.

Fill and serve wraps

Place 1-2 spoonfuls of the ground venison and chestnut mixture into a lettuce leaf and roll up. Sprinkle with spring onions, cilantro, chili flakes and sesame seeds and serve.
