Description

This recipe for green power waffles with dill cucumber salad is a delicious and healthy meal. The waffles are prepared with spelt flour and pea flour and refined with fresh vegetables. The dill cucumber salad provides a refreshing touch. The dish is vegetarian and vegan and is ideal as a light lunch or dinner.

Ingredients (22 ingredients)

  • 120 g Spelt flour (Type 1050)
  • 120 g Green pea flour
  • 2 TL Baking powder
  • 50 ml Vegetable oil
  • 2 EL Apple syrup
  • 80 g Soy yogurt
  • 200 ml Sparkling mineral water
  • 1 EL White wine vinegar
  • Salt
  • Black pepper
  • Paprika powder
  • 40 g Baby spinach
  • 0.5 Bund Parsley (flat-leaf or curly)
  • 4 Stück Cherry tomatoes
  • 0.5 Stück Onion
  • 2 Stück Cucumber
  • Salt
  • 1 Bund Dill
  • 150 ml Oat Cuisine
  • 1 EL White wine vinegar
  • 1 EL Apple syrup
  • Black pepper

Preparation (7 steps)

Mix dry ingredients

Place 120 g of spelt flour, 120 g of green pea flour and 2 heaped tsp of baking powder in the mixing bowl and mix for 10 sec/speed 4.

Prepare the dough

20 sec/Speed 3

Add 50 ml vegetable oil, 2 tbsp apple syrup, 80 g soy yogurt, 200 ml sparkling mineral water, 1 tbsp white wine vinegar, salt, black pepper and paprika powder and stir for 20 sec/speed 3.

Prepare and fold in the vegetables

Chop 40 g baby spinach and ½ bunch of parsley, and also chop 4 cherry tomatoes. Finely dice ½ onion. Fold the spinach, parsley, tomatoes and diced onion into the dough.

Bake the waffles

Lightly grease the waffle iron with vegetable oil and bake the waffles in it.

Prepare the cucumbers

For the cucumber salad, finely slice 2 cucumbers, sprinkle with a little salt and leave to stand for 10 minutes. Drain the water.

Prepare the dressing

Chop 1 bunch of dill, add to the mixing bowl with 150 ml Oat Cuisine, 1 tbsp white wine vinegar and 1 tbsp apple syrup and mix for 5 sec/speed 3.

Season the cucumber salad and serve

Pour the dressing over the cucumber slices. Season to taste with salt and black pepper. Serve and enjoy the green power waffles with the cucumber salad.
