Description

This mille-feuille of green cabbage and fish is a recipe that I love to prepare for the end of year celebrations. It is an original and light way to enjoy green cabbage, often associated with richer dishes. The association with white fish and smoked salmon brings a festive and refined touch. The light fresh cream and dry white wine create a delicate sauce that enhances the flavors of the fish and cabbage. This dish is perfect for an elegant appetizer or a light main course. It is easy to prepare and can be prepared in advance, which is ideal for receiving without stress. Do not hesitate to add some fresh herbs for even more flavor! A real delight for the taste buds.

Ingredients (13 ingredients)

  • 400 g white fish fillets
  • 180 g smoked salmon
  • 20 cl fish stock
  • 15 cl dry white wine
  • 1 piece curly green cabbage
  • 1 citron lemon
  • 8 c. à s. light fresh cream at 4%
  • 2 c. à c. margarine at 60%
  • 2 c. à s. wine vinegar
  • 2 c. à s. shallots
  • 1 c. à s. chives
  • to taste Salt or fine salt
  • to taste Pepper

Preparation of shallots

Put the shallots in the Thermomix bowl and chop finely for 5 Sek./Stufe 5.

Cooking shallots

Add the margarine to the bowl with the chopped shallots and cook for 3 Min./120°C/Stufe 1.

Preparation of fish stock

Pour the fish stock and dry white wine into the bowl. Add the wine vinegar, salt and pepper. Cook for 10 Min./100°C/Stufe 2.

Preparation of green cabbage

Meanwhile, wash and cut the green cabbage into thin strips. Add the green cabbage to the bowl and cook for 15 Min./100°C/Linkslauf Stufe 1.

Preparation of fish

Cut the white fish fillets into pieces and the smoked salmon into strips. Add the white fish to the bowl and cook for 5 Min./100°C/Linkslauf Stufe 1.

Adding cream and salmon

2 min/140°F/Linkslauf Gentle stir speed 60 Reverse

Add the light fresh cream and smoked salmon to the bowl. Mix gently for 2 Min./60°C/Linkslauf Sanftrührstufe.

Assembly and baking in the oven

Preheat the oven to 180°C. Butter a pie dish. Arrange a layer of green cabbage, then a layer of fish, and so on. Finish with a layer of green cabbage. Pour the lemon juice on top. Cover with aluminum foil and bake for 30 minutes.

Finish and serve

Remove the aluminum foil and cook for another 10 minutes to brown the top. Sprinkle with chopped chives before serving.
