Description

This beef cheek with onion preparation dish is a true comforting delight, perfect for autumn evenings.   • 1 feuille bay leaf

  • 1 cuillère goose fat
  • 454 g onion
  • 1 branche celery
  • 1 l water
  • 3 piece carrots
  • 3 piece leeks
  • 1 piece turnip
  • 1 piece beef cheek

In a saucepan, place the beef cheek and cover with cold water. Bring to a boil and skim. Simmer over low heat for 1 hour 30 minutes.

Addition of vegetables and aromatics

Add 3 carrots cut into pieces, 3 leeks cut into rounds, 1 turnip cut into dice, 1 stalk of celery cut into pieces, 1 onion pricked with 1 clove and 1 bay leaf. Cook for 1 hour.

Shredding the beef cheek

Remove the beef cheek from the pot and shred it with two forks.

Preparation of the onion preparation

In a frying pan, melt 1 spoon of goose fat. Add 1 lb of sliced ​​onions and brown them, stirring regularly.

Thickening the sauce

Sprinkle the onions with 1 spoon of flour and mix. Pour in 2 glasses of beef cheek cooking broth.

Simmering the sauce

Simmer the onion sauce for 30 minutes over low heat.

Reheating the beef cheek

Add the shredded beef cheek to the sauce and heat for 20 minutes.
