Description

This nut marzipan ring cake is a true festive classic! I bake it every year during the Christmas season, and it's always a hit. The combination of juicy yeast dough, aromatic marzipan and crunchy nuts is simply irresistible. The preparation in the Thermomix® makes the dough particularly easy and wonderfully fluffy. The marzipan stars make the cake a real eye-catcher on every coffee table. A tip: If you like, you can add some grated orange peel to the dough. Simply tastes delicious!

Ingredients (17 ingredients)

  • 500 g Flour
  • 1 pinch Salt
  • 125 g Sugar
  • 1 Stücke Grated zest of 1 untreated lemon
  • 1 Pck. Vanilla sugar
  • 150 g Soft butter
  • 1 Ei Egg (size M)
  • 150 ml Milk
  • 42 g Fresh yeast
  • 200 g Marzipan raw material
  • 100 g Walnut kernels
  • 100 g Cashew kernels
  • 200 g Hazelnuts (with skin)
  • 50 g Powdered sugar
  • 200 g Hazelnut cake glaze
  • 0.5 tsp Cocoa powder
  • Flour for hands

Preparation (13 steps)

Mix dry ingredients

Put 500 g flour, 1 pinch of salt, 125 g sugar, the grated zest of 1 untreated lemon and 1 pack vanilla sugar into the mixing bowl and mix for 10 sec/speed 4.

Prepare yeast

2 min/99°F/Speed 2 37

Pour 150 ml milk into the mixing bowl and heat for 2 min/37°C/speed 2. Crumble in 1 cube (42 g) fresh yeast and dissolve for 10 sec/speed 3.

Knead dough

Thermomix® Setting
2 min/Kneading speed

Add 150 g soft butter and 1 egg (size M) to the ingredients in the mixing bowl. Knead for 2 min/kneading level to form a smooth dough.

Let the dough rise

Remove the dough from the mixing bowl, place in a bowl, cover and let rise in a warm place for about 45 minutes.

Chop nuts

Put 200 g hazelnuts (with skin), 100 g walnut kernels and 100 g cashew kernels into the mixing bowl and chop for 5 sec/speed 5. Transfer.

Knead in marzipan and nuts

Dice 125 g marzipan raw material and add to the dough together with the chopped nuts. Knead into the dough with floured hands. Shape into a roll.

Prepare tin and insert dough

Grease a ring cake tin (2.5 liters capacity) well and sprinkle with flour. Place the dough in the tin and let rise again in a warm place for about 40 minutes.

Prepare marzipan stars

Put 75 g marzipan raw material and 40 g powdered sugar into the mixing bowl and knead for 20 sec/speed 4.

Roll out marzipan and cut out stars

Sieve 10 g powdered sugar thinly onto a work surface. Roll out marzipan on it about 2 mm thick and cut out various sized stars. Place on a board and set aside.

Baking

Bake the cake in a preheated oven (electric oven: 200 °C/ convection oven: 175 °C/ gas: level 3) on the lower rack for 40-45 minutes. Cover the cake after about 20 minutes of baking time.

Let the cake cool down

Remove the cake from the oven, let it rest in the tin for about 15 minutes, turn it out onto a wire rack and let it cool down.

Melt glaze

Bring water to a boil in a small saucepan. Remove from the hob and place cake glaze in it. After about 10 minutes, remove the bag (carefully, as it is hot) from the water, cut off the corner with scissors.

Decorate

Spread the glaze evenly over the cake. Let it dry, dust with ½ tsp cocoa powder and decorate with marzipan stars.
