Description

This pistachio and dark chocolate doughnut is a true pleasure for the palate! The combination of the intense flavor of chocolate with the crunchiness of pistachios creates a perfect harmony. Preparing it with the Thermomix® is child's play and the result is always soft and delicious. Ideal for a tasty snack or to celebrate a special occasion. I often prepare it for my grandchildren's birthday and it always goes like hot cakes! Try it, you won't regret it!

  • Cornstarch
  • Eggs
  • Butter
  • Sugar
  • Dark chocolate
  • Pistachios
  • Candied cherries
  • Baking powder
  • Whole milk
  • Powdered sugar
  • Lemon juice
  • Bitter cocoa

Preparation (12 steps)

Melt the chocolate with the milk

Thermomix® Setting
3 min/122°F/Speed 2 50

Put the dark chocolate into pieces and the whole milk into the bowl. Melt for 3 Min./50°C/Level 2.

Cool the chocolate mixture

Transfer the melted chocolate mixture to a bowl and let it cool slightly.

Whip the butter with the sugar

2 min/Speed 4

Put the softened butter at room temperature and the sugar into the bowl. Whisk for 2 Min./Level 4.

Add the eggs

Add the eggs to the butter and sugar mixture. Mix for 1 Min./Level 3.

Sift the flours and the yeast

In a separate bowl, sift the flour, cornstarch and baking powder.

Incorporate the dry ingredients

Gradually add the sifted dry ingredients to the butter and egg mixture in the bowl. Mix for 30 Sek./Level 2.

Add the melted chocolate

Thermomix® Setting
30 sec/Speed 3

Add the cooled melted chocolate to the mixture in the bowl. Mix for 30 Sek./Level 3.

Chop the pistachios

Thermomix® Setting
5 sec/Speed 5

Put the pistachios in the bowl and chop for 5 Sek./Level 5.

Incorporate pistachios and cherries

Add the chopped pistachios and the candied cherries cut into small pieces to the mixture in the bowl. Mix with the spatula to mix well.

Pour into the mold and bake

Grease and flour a doughnut mold. Pour the dough into the mold. Bake in a preheated oven at 200°C for about 40 minutes.

Prepare the glaze

20 sec/Speed 3

In the clean bowl, put the powdered sugar and the lemon juice. Mix for 20 Sek./Level 3, until you get a smooth and dense glaze.

Glaze and decorate

Pour the glaze over the cooled doughnut. Dissolve the bitter cocoa in a tablespoon of water and mix it with a portion of the glaze. Decorate the doughnut with chocolate icing and candied cherries.
