Description

This sausage and black-eyed pea hotpot is a hearty and flavorful dish perfect for a chilly evening. I've been making this recipe for years, and it's always a hit with my family. The combination of savory sausage, tender black-eyed peas, and a hint of spice from the hot sauce creates a truly satisfying meal. It's also incredibly easy to prepare, making it ideal for busy weeknights. Feel free to adjust the amount of hot sauce to your liking – I personally love a good kick! This stew is also great for meal prepping, as it tastes even better the next day.

Ingredients (15 ingredients)

  • 2 pounds bratwurst sausages
  • 2 can black-eyed peas
  • 2 pack frozen cut green beans
  • 2 cups cubed potatoes
  • 1 cup chopped onion
  • 2 clove garlic, minced
  • 32 fluid ounce chicken stock
  • 2 tablespoon hot Buffalo wing sauce
  • 2 tablespoon ketchup
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoon ground thyme
  • salt
  • ground black pepper
  • 0.25 cup all-purpose flour (Optional)
  • 1 cup water (Optional)

Preparation (5 steps)

Prepare the ingredients

Cut 2 pounds of bratwurst sausages into thirds. Rinse and drain 2 (15 ounce) cans of black-eyed peas. Thaw 2 (9 ounce) packages of frozen cut green beans. Cube 2 cups of potatoes. Chop 1 cup of onion. Mince 2 cloves of garlic. Set aside.

Sauté onion and garlic

Add the chopped onion and minced garlic to the mixing bowl. Sauté for 3 minutes at 120°C on speed 1.

Combine ingredients in the mixing bowl

Add the cut bratwurst sausages, rinsed and drained black-eyed peas, thawed green beans, cubed potatoes, 1 (32 fluid ounce) container of chicken stock, 2 tablespoons of hot Buffalo wing sauce, 2 tablespoons of ketchup, 1 tablespoon of Worcestershire sauce, ½ teaspoon of ground thyme, salt, and ground black pepper to taste into the mixing bowl.

Cook the stew

If desired, whisk ¼ cup of all-purpose flour and 1 cup of water together in a bowl until smooth. Pour the mixture into the mixing bowl and simmer for 5 minutes at 100°C on speed 1.
