Description

This hearty stew with smoked pork loin is real soul food for cold days! I especially like to make it in autumn and winter, when the regional vegetables are in season. The spelt gives the stew a nice nutty note and makes it extra filling. The preparation takes a little while, but the effort is definitely worth it. The dish can also be prepared well in advance and tastes almost even better when warmed up. Perfect for a cozy family meal!

Ingredients (8 ingredients)

  • 1 piece Soup vegetables
  • 600 g White cabbage
  • 800 g Small potatoes (e.g. new potatoes)
  • 150 g Spelt grains
  • to taste Pepper
  • 1 l Vegetable broth
  • 6 slice Smoked pork loin neck steaks
  • 0.5 bunch Parsley

Preparation (7 steps)

Prepare soup vegetables

Thermomix® Setting

Clean or peel and wash the soup vegetables. Then cut into coarse pieces and place in the mixing bowl. Chop for 5 sec./speed 5. Scrape down with the spatula.

Prepare white cabbage

Thermomix® Setting
3 sec/Speed 4

Clean, wash and slice the white cabbage. Add to the chopped soup vegetables in the mixing bowl and chop for 3 sec./speed 4. Scrape down with the spatula.

Prepare potatoes

Wash, peel and halve the potatoes. Distribute in a large ovenproof stew pot or roaster together with the spelt grains, pepper and the chopped vegetables from the mixing bowl.

Heat broth

Thermomix® Setting
5 min/212°F/Speed 1 100

Pour vegetable broth into the mixing bowl and heat for 5 min./100°C/speed 1.

Fill and stew the stew pot

Pour the hot broth over the vegetables in the stew pot. Wash the smoked pork loin slices, pat dry and distribute on top. Put the lid on and stew in the preheated oven (electric oven: 175 °C/ convection oven: 150 °C/ gas: see manufacturer's instructions) for approx. 1 1/2 hours.

Chop parsley

Thermomix® Setting
3 sec/Speed 8

Wash the parsley and shake dry. Pluck the leaves and place in the mixing bowl. Chop for 3 sec./speed 8.

Bake and serve

Remove the stew pot from the oven, remove the lid. Grill under the preheated grill of the oven (250 °C) for approx. 5 minutes. Sprinkle with the chopped parsley and serve.
