Description

A hearty goulash with tender pieces of meat and fresh mushrooms, refined with red wine and cream. This savory dish is ideal for festive occasions or cozy autumn evenings. Ingredients (13 ingredients)

  • 1000 g mixed goulash (half beef/half pork)
  • 2 tbsp clarified butter
  • 3 medium-sized onions
  • 200 g mushrooms
  • salt
  • black pepper
  • 2 tbsp tomato paste
  • 2 tbsp flour
  • 1 tsp sweet paprika
  • 400 ml beef stock
  • 0.25 l dry red wine
  • 4 tomatoes
  • 100 g heavy cream

Preparation (9 steps)

Prepare the meat

Pat 1 kg mixed goulash (half beef/half pork) dry. Heat 2-3 tbsp clarified butter in a pan. Brown the meat in portions, turning only when the underside has a crust. Set the browned meat aside.

Chop the onions

Peel and quarter 3 medium-sized onions and place in the mixing bowl. Chop for 3 sec./speed 5.

Sauté the onions

Leave the chopped onions in the mixing bowl. Sauté for 2 min./120°C/speed 1 without the measuring cup.

Prepare mushrooms and tomatoes

Clean and halve 200 g mushrooms. Wash and quarter 4 tomatoes.

Add vegetables to the goulash

Return the browned meat to the mixing bowl. Season with salt and black pepper. Add the mushrooms and tomatoes and sauté for 2 min./120°C/speed 1.

Add tomato paste and flour

Stir in 2 tbsp tomato paste and sauté for 1 min./120°C/speed 1. Sprinkle 2-3 tbsp flour over it and sauté for 1 min./120°C/speed 1 while stirring.

Briefly stir in 1-2 tsp sweet paprika and sauté for 30 sec./120°C/speed 1.

Deglaze and Simmer

Deglaze with 1/4 l dry red wine. Pour in 400 ml beef stock (glass), bring to a boil and dissolve the browned bits. Cover and simmer for 120 min./95°C/speed 1. If necessary, add some water or broth in between.
