Description

This hachis parmentier revisited with celeriac and spiced chicken is a comforting and flavorful dish, perfect for autumn evenings. I love the sweetness of the celeriac which goes wonderfully with the fragrant chicken. It's a recipe I often make when I want a simple but delicious dish. The preparation is quite quick, about 30 minutes, and the baking in the oven brings an irresistible gratiné touch. Feel free to vary the spices according to your taste! This dish is ideal for a dinner with family or friends, and it is even better reheated the next day. A real delight!

Ingredients (11 ingredients)

  • 3 piece Chicken fillet
  • 1 piece Celeriac
  • 1 piece Onion
  • to taste Grated cheese
  • to taste Lemon juice
  • 1 piece Carrot
  • to taste Olive oil
  • to taste Spices
  • to taste Milk
  • to taste Water
  • to taste Salt

Preparation (10 steps)

Celeriac in cubes

Peel the celeriac and cut it into cubes of about 2 cm. Set aside.

Cooking the celeriac

20 min/212°F/Speed 1 100

Fill the Thermomix bowl with 1 liter of water. Add the juice of half a lemon. Program 20 Min./100°C/Stufe 1.

Adding the celeriac

Add the celeriac cubes to the bowl and cook 15 Min./100°C/Stufe 1.

Preparing the vegetables

Meanwhile, peel the onion and carrot. Cut the onion into quarters and the carrot into slices.

Preparing the chicken

Cut the chicken fillets into small cubes of about 1 cm.

Cooking the chicken and vegetables

In a pan, heat 2 tbsp of olive oil over medium heat. Add the onion, carrot, 1 tsp of spices and the pieces of chicken. Mix and simmer for 10 minutes, until the chicken is cooked.

Chicken and vegetable purée

Pour the mixture of cooked chicken and vegetables into the Thermomix bowl. Add 50 ml of water and 50 ml of milk. Mix 30 Sek./Stufe 8, gradually increasing the speed.

Adjusting the consistency

If the purée is too thick, add water or milk as you wish and mix again 10 Sek./Stufe 5.

Seasoning

Taste and adjust the seasoning with salt to your liking. Mix 5 Sek./Stufe 3 to combine.

Gratin

Preheat the oven grill. Oil a gratin dish and pour half of the purée inside. Add 6 tsp of grated cheese to the preparation and bake under the grill, checking the preparation from time to time, about 5-10 minutes.
