Description

This hearty meatloaf after "Aunt Sofie" is a savory main course that is easily prepared with the Thermomix®. Celery and leek are finely grated with the Wundermix WunderSlicer V2, while the Meistermix Patix dough knife ensures a uniform meatloaf mixture. The preparation time is about 60 minutes and the recipe is designed for 4 servings.

Ingredients (14 ingredients)

  • 250 g Ricotta
  • 400 g Minced meat
  • 100 g Celery and leek, finely grated
  • 5 EL Parmesan or Alpine mountain cheese
  • 1 Bund Parsley
  • 2 Stück Eggs
  • 2 EL Oat bran (30 g)
  • Herb salt
  • Pepper
  • Nutmeg
  • 1 EL Wholemeal breadcrumbs
  • 1 EL Rapeseed oil
  • 1 dl White wine (100 g)
  • Vegetable broth

Preparation (4 steps)

Prepare vegetables

Place 100 g celery and leek with the Wundermix WunderSlicer V2 on the mixing bowl lid and finely grate with the fine disc. Set the grated vegetables aside.

Prepare meatloaf mixture

Thermomix® Setting

Add 250 g ricotta, 400 g minced meat, the prepared vegetables, 5 tbsp Parmesan or Alpine mountain cheese, 1 bunch parsley, 2 eggs, 2 tbsp oat bran, herb salt, pepper and nutmeg to the mixing bowl and stir with the Meistermix Patix dough knife for 20 sec/speed 4.

Shape and fry loaves

Form two larger or four smaller loaves from the mixture with wet hands. Heat 1 tbsp rapeseed oil in a pan and fry the loaves all around in it.

Braise loaves

Deglaze the fried loaves with 1 dl white wine and let the wine evaporate completely. Gradually add vegetable broth. Simmer covered on the stove.
