Description

These chicken balls with quinoa, flavored with Thai flavors, are a real delight! I often prepare them for a quick lunch or a light dinner. The quinoa brings a pleasant texture and a good dose of protein, while the coriander, garlic and chili pepper enhance the taste in an exquisite way. This is a recipe that I adapted to the Thermomix® for simplicity, and the result is always perfect. They can be served with a green salad or basmati rice for a complete meal. They are perfect for a healthy and tasty meal, and will please the whole family. A real favorite!

Ingredients (14 ingredients)

  • 250 g Chicken breast(s)
  • 40 g Quinoa
  • 1 piece Egg(s)
  • 1 poignée(s) Coriander
  • 1 poignée(s) Onion(s)
  • 1 c. à soupe Soy sauce
  • 1 c. à café Rice vinegar
  • 1 c. à soupe Ginger powder
  • 1 c. à café Paprika
  • 1 pointe(s) Hot pepper(s)
  • 2 gousse(s) Garlic
  • Breadcrumbs
  • Vegetable oil
  • Salt pepper l

Cooking the quinoa

Thermomix® Setting
10 min/212°F/Speed 1 100

Rinse 40 g of quinoa thoroughly under cold water. Pour the rinsed quinoa into the Mixtopf with 200 ml of cold water and a pinch of salt. Program 10 Min./100°C/Stufe 1. Once cooking is complete, drain the quinoa and set aside.

Preparing the filling

10 sec/Speed 5

Cut 250 g of chicken breast into pieces. Put the chicken pieces in the Mixtopf with 1 handful of fresh coriander, 2 cloves of garlic and 1 handful of onion. Chop everything 10 Sek./Stufe 5. Add the cooked quinoa and mix 5 Sek./Stufe 3.

Seasoning and mixing

In a bowl, break 1 egg and beat it with 1 tbsp of soy sauce, 1 tsp of rice vinegar, 1 tbsp of ginger powder, 1 tsp of paprika, 1 pinch of hot pepper, salt and pepper. Pour this mixture into the Mixtopf and mix gently 10 Sek./Linkslauf/Stufe 2.

Shaping the balls

Take portions of the preparation and form balls with slightly moistened hands. Roll the balls in breadcrumbs.

Baking

Lightly oil a gratin dish. Place the balls in the dish and drizzle with a little vegetable oil. Bake for 10 minutes at 180°C, then turn the balls over and cook for another 10 minutes.
