Description

These spicy beer-braised beans are a hearty and flavorful dish, perfect for a chilly evening. I've been making this recipe for years, and it's always a hit! The combination of mayocoba beans, bacon, ham, and a touch of Mexican beer creates a rich and satisfying flavor profile. The jalapeños add a nice kick, while the cilantro provides a fresh, vibrant finish. This dish is great on its own or as a side to your favorite Mexican dishes. It does take some time to soak the beans, but the end result is well worth the effort. Enjoy!

Ingredients (12 ingredients)

  • 1 pound dry mayocoba beans
  • 2 tsp vegetable oil
  • 1 piece white onion, chopped
  • 4 piece Roma (plum) tomatoes, chopped
  • 1 piece serrano chile pepper, minced
  • 8 ounce bacon, chopped
  • 2 slice fully cooked ham, cut into cubes
  • 12 fluid ounce Mexican beer
  • 7 ounce pickled jalapeño chile pepper slices, undrained
  • 0.5 bunch fresh cilantro, chopped
  • 1 tbsp chicken bouillon granules
  • sea salt

Preparation (7 steps)

Soak the beans

Place 1 pound of dry mayocoba beans in a large bowl with enough cool water to cover by several inches; soak for 8 hours to overnight. This step is done outside of the Thermomix.

Cook the beans

Drain the soaked beans and rinse thoroughly. Transfer the beans to the Thermomix. Add enough water to cover the beans by several inches. Cook for 90 Min./100°C/Stufe 1.

Chop onion

Thermomix® Setting

Add 1 white onion, chopped, to the Thermomix bowl and chop for 3 Sec./Stufe 5.

Sauté onion, tomatoes, and serrano

Thermomix® Setting
15 min/212°F/Speed 1 100

Add 2 teaspoons of vegetable oil, 4 Roma (plum) tomatoes, chopped, and 1 minced serrano chile pepper to the Thermomix bowl. Cook for 15 Min./100°C/Stufe 1.

Cook bacon

Cook 8 ounces of chopped bacon in a large, deep skillet over medium-high heat, stirring occasionally, until very crispy, about 10 minutes. Transfer to a paper towel-lined plate to drain using a slotted spoon, leaving drippings in skillet. This step is done outside of the Thermomix.

Cook ham

Add 2 thick slices of fully cooked ham, cut into cubes, to the same skillet; cook in drippings until browned, about 5 minutes. Transfer to the plate with bacon to drain using a slotted spoon. This step is done outside of the Thermomix.

Combine ingredients and simmer

Add the cooked tomato mixture, bacon, ham, 1 (12 fluid ounce) can or bottle of Mexican beer, 1 (7 ounce) can of pickled jalapeño chile pepper slices (undrained), ½ bunch of chopped fresh cilantro, and 1 tablespoon of chicken bouillon granules to the Thermomix bowl with the cooked beans. Season with sea salt to taste. Cook for 30 Min./95°C/Stufe 1/Linkslauf.
