Description

Chicken harira is a comforting Moroccan soup, perfect for autumn or winter evenings. I often prepare it for dinner because it is both nourishing and full of flavors. The tender chicken, lentils and chickpeas go perfectly with warm spices like turmeric and cinnamon. A little fresh coriander and a squeeze of lemon add a touch of freshness. This soup is ideal for a convivial meal with family or friends. It is also perfect for days when you need a comforting and easy to prepare dish. A real treat!

Ingredients (16 ingredients)

  • 350 g Chicken
  • 500 g Tomatoes
  • 1 c. à soupe Turmeric powder
  • 1 c. à soupe Cinnamon powder
  • Olive oil
  • 2 c. à soupe Fresh coriander
  • 2 g Saffron
  • 5 piece Celery stalks
  • 1 c. à café Tomato concentrate
  • 250 g Lentils
  • 300 g Chickpeas
  • 4 piece Onions
  • 3 c. à soupe Flour
  • Salt
  • Pepper
  • 4 piece Lemons

Preparation (10 steps)

Tomato preparation

Fill a saucepan with water and bring to a boil. Dip the tomatoes (500 g) for 30 seconds, then immediately cool them in cold water. Peel the tomatoes and cut them into small pieces. Set aside.

Chop the onions

Place the onions (4) cut into quarters in the Thermomix bowl and chop for 3 Sek./Stufe 5.

Brown the onions

Add a little olive oil to the Thermomix bowl and brown the chopped onions for 3 Min./120°C/Stufe 1.

Cook the chicken and spices

Cut the chicken breast (350 g) into pieces and add it to the bowl. Add the turmeric powder (1 tbsp), cinnamon powder (1 tbsp), fresh coriander (2 tbsp), saffron (2 g) and tomato concentrate (1 tsp). Cook for 5 Min./100°C/Stufe 1.

Add the tomatoes and cook

Add the diced tomatoes to the Thermomix bowl and cook for 30 Min./100°C/Stufe 1.

Add the lentils and chickpeas

Rinse the lentils (250 g) and add them to the Thermomix bowl. Drain the chickpeas (300 g) and add them as well. Add the celery stalks (5) cut into pieces. Cover with boiling water up to the maximum mark of the bowl.

Cook the lentils and chickpeas

Cook for 20 Min./100°C/Stufe 1.

Prepare the flour binding

In a bowl, mix the flour (3 tbsp) with a little cooking stock taken from the Thermomix bowl, whisking to avoid lumps.

Add the binding and finalize cooking

Pour the flour binding into the Thermomix bowl, stirring constantly. Cook for 5 Min./100°C/Stufe 2.

Season and serve

Salt and pepper to taste. Serve the hot chicken harira, garnished with fresh coriander and lemon wedges (4).
