Description

This kale stew with sweet potatoes is real soul food for cold days! The sweetness of the potatoes harmonizes wonderfully with the hearty kale and the spicy smoked pork loin. I especially like to make this stew in winter when kale is in season. It is super easy to prepare and warms you from the inside. The apple rings give the dish a slightly fruity note. A great dish for the whole family and can also be prepared well in advance!

Ingredients (11 ingredients)

  • 1 kg Sweet potatoes
  • 2 piece Onions
  • 1 clove Garlic
  • 500 g Kale
  • 200 g Smoked pork loin
  • 40 g Dried apple rings
  • 4 tbsp Rapeseed oil
  • 1.2 l Vegetable broth
  • to taste Salt
  • to taste Pepper
  • 2 tsp Sweet paprika powder

Prepare sweet potatoes, onions and garlic

Peel the sweet potatoes and cut into approx. 1 cm cubes. Peel the onion, halve it and place it in the mixing bowl. Peel and add the garlic clove as well.

Add oil to the mixing bowl and add the chopped onions and garlic. Sauté everything for 3 min./120°C/speed 1.

Add sweet potatoes, smoked pork loin and apple rings

Add the diced sweet potatoes, the diced smoked pork loin and the apple rings cut into pieces to the mixing bowl.

Pour in vegetable broth and season

Pour vegetable broth into the mixing bowl. Season with salt, pepper and paprika powder.

This hearty kale stew with sweet potatoes is more than just a recipe for me – it is a reminder of cold winter days in my childhood. My grandma always cooked it, and the scent of kale and smoked pork loin that wafted through the house is unforgettable. I have adapted her recipe somewhat over the years to adapt it to the Thermomix® and give it my own touch. The sweet potatoes are the star here, bringing a natural sweetness and creaminess to the stew that harmonizes wonderfully with the slightly bitter kale. I make sure to choose sweet potatoes with an intense orange color, as these are usually sweeter and more aromatic. The onions and garlic form the aromatic base that gives the dish depth. The kale, preferably fresh from the market, should be washed thoroughly and freed from the thick leaf ribs, as these can be a bit tough. The smoked pork loin provides a hearty, smoky note and provides the necessary spice. The apple rings, an often underestimated detail, bring a fruity sweetness and a slightly acidic component into play, which perfectly rounds off the stew. When preparing in the Thermomix®, it is important not to sauté the onions and garlic for too long, as they can burn otherwise. The sweet potatoes should be cut into roughly the same size cubes so that they cook evenly. When adding the kale, the reverse direction is important so that it is not chopped up, but gently braised. Make sure that the kale is well covered with the broth so that it cooks evenly. For a vegetarian or vegan version, the smoked pork loin can simply be omitted and replaced with smoked tofu or tempeh. To enhance the smoky flavor, you can also add some smoked paprika powder. Instead of vegetable broth, a strong mushroom broth can also be used to give the stew an additional umami note. If you like it spicier, you can add a pinch of chili flakes or some chopped chili. The kale stew is best served hot, straight from the Thermomix®. Fresh farmhouse bread or crispy rye bread goes well with it. If you like, you can also refine the stew with a dollop of sour cream or yogurt. A spoonful of applesauce is also a delicious addition. The kale stew can be prepared very well in advance and will keep in the refrigerator for 2-3 days. It can also be frozen without any problems. When reheating, it should be heated slowly and diluted with a little broth if necessary. This way you have a healthy and warming dish at hand even on stressful days.
