This pork and vegetable stew is a hearty and comforting dish, perfect for a cold winter evening.   • 1 pound boneless country-style pork ribs, cut into 1-inch chunks
  • 2 tablespoons vegetable oil
  • 2 cups chopped onions
  • 2 cloves garlic, crushed
  • 1.5 pounds potatoes, peeled and cubed
  • 2 quarts water
  • 4 large carrots, peeled and cut into 1/2-inch pieces
  • 1.5 tablespoons chili powder
  • 2 teaspoons beef bouillon granules
  • 1 teaspoon dried marjoram
  • 1 teaspoon salt
  • 0.5 teaspoon dried thyme
  • 2 piece bay leaves
  • 0.125 teaspoon ground nutmeg
  • 0.125 teaspoon ground black pepper
  • 6 tablespoons all-purpose flour, sifted
  • 0.25 cup yellow cornmeal
  • 2 teaspoons white sugar
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon dried sage, crumbled
  • 0.25 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 2 tablespoons vegetable shortening
  • 0.5 cup milk, or as needed

Preparation (7 steps)

Prepare Pork Ribs

Arrange the 1 pound of boneless country-style pork ribs, cut into 1-inch chunks, in a large baking pan. Cook pork under the preheated broiler, stirring often, until meat is browned, about 10 minutes. Pour off and discard fat.

Pour in 2 quarts of water, 4 large peeled and cut carrots, 1 ½ tablespoons of chili powder, 2 teaspoons of beef bouillon granules, 1 teaspoon of dried marjoram, 1 teaspoon of salt, ½ teaspoon of dried thyme, 2 bay leaves, ⅛ teaspoon of ground nutmeg, and ⅛ teaspoon of ground black pepper to the mixing bowl. Cook for 180 minutes/100°C/Stufe 1/Linkslauf.

Prepare Dumpling Dough

Combine 6 tablespoons of sifted all-purpose flour, ¼ cup of yellow cornmeal, 2 teaspoons of white sugar, 1 ½ teaspoons of baking powder, ¼ teaspoon of dried sage, crumbled, ¼ teaspoon of dried thyme, and ½ teaspoon of salt for the dumplings in a large bowl. Cut in 2 tablespoons of vegetable shortening until mixture resembles a coarse meal. Add ½ cup of milk all at once, stirring just until dough holds together.

Cook Dumplings in Stew

Remove bay leaves from the stew. Bring stew to a gentle boil. Drop dough by rounded spoonfuls evenly over the surface. Cover the pot and cook for 12 minutes/100°C/Stufe 1/Linkslauf until dumplings are cooked through.
