Description

This hearty pancake soup is real comfort food! The base is a strong beef broth, refined with fresh soup vegetables and aromatic spices. The special thing is the thin pancakes, cut into fine strips, the so-called 'Flädle'. Together with the caramelized onion rings and fresh chives, this makes a warming and filling meal. I especially like to make this soup in autumn and winter when it's cold outside. It is also a great dish for festive occasions!

Ingredients (16 ingredients)

  • 1 bunch Soup vegetables
  • 4 piece large Onions
  • 2 piece large Tomatoes
  • 2 tbsp Oil
  • 2 piece large Beef slices with marrow bones
  • 2 piece Bay leaves
  • 1 tbsp black Peppercorns
  • 5 piece Allspice grains
  • Salt
  • 100 g Flour
  • 200 ml Milk
  • 2 piece Eggs (size M)
  • 50 ml Sparkling mineral water
  • 5 tbsp Butter
  • Pepper
  • 0.5 bunch Chives

Preparation (13 steps)

Prepare soup vegetables

Wash and roughly chop the soup vegetables. Halve the one onion.

Roast onion

Roast the halved onion vigorously in a pan without fat until it takes on color. Then remove from the pan.

Fry beef slices

Heat 1 tablespoon of oil in the pan and briefly fry the beef slices in it.

Prepare broth

Place the fried beef slices with approx. 3.5 l water in the mixing bowl. Add the roasted onion, the tomatoes (scored in a cross), the soup vegetables, bay leaves, peppercorns, allspice grains and 1 tablespoon of salt. Cook for 150 Min./98°C/level 1.

Strain broth

Pour the broth through a sieve lined with muslin and return to the mixing bowl.

Season broth

Stir the broth with salt and pepper for 5 sec./level 3 and season to taste.

Prepare 'Flädle' dough

Put flour, milk, eggs and 1 pinch of salt in the mixing bowl and stir for 20 sec./level 4. Let the dough rest for about 30 minutes.

Stir in mineral water

Thermomix® Setting

Add the sparkling mineral water to the dough and stir in for 5 sec./level 3.

Bake 'Flädle'

Heat 3 tablespoons of butter in portions in a small pan (approx. 18 cm Ø). Bake approx. 6 pancakes from the dough, roll them up and let them cool. Cut rolls diagonally into slices.

Prepare onion rings

Peel the remaining 3 onions and cut into fine rings.

Sauté onion rings

Heat 2 tablespoons of butter and 1 tablespoon of oil in a pan. Sauté the onion rings in it for about 15 minutes until they are soft and lightly browned. Season with salt.

Chop chives

Wash the chives, shake dry and cut into fine rolls.

Arrange

Arrange the soup with 'Flädle', sautéed onions and chives and serve.
