Description

This pizza is a poem! The dough becomes particularly loose and aromatic with a cooked potato. Topped with sun-ripened tomatoes, creamy mozzarella and hearty smoked ham, it is a real treat. A few fresh basil leaves round off the whole thing perfectly. Ideal for a cozy evening with friends or as a highlight at any party. The preparation takes a little while, but the result is worth every minute! If you like, you can of course use other ingredients and vary the pizza to your heart's content.

Ingredients (13 ingredients)

  • 1 tsp Sugar
  • 5 g Yeast
  • 250 g Flour
  • 1 piece small peeled cooked potato from the previous day
  • 1 tbsp Oil
  • 150 g Mozzarella
  • 1 piece Tomato
  • 125 g chunky tomatoes
  • Salt
  • Pepper
  • 8 piece Olives
  • 3 Stiele Basil
  • 3 Scheiben Parma ham

Preparation (7 steps)

Heat water

Put 50 ml water and 1 tsp sugar in the mixing bowl and heat for 2 min./37°C/speed 1.

Dissolve yeast

Add 5 g yeast and stir for 10 sec./speed 2.

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Add 250 g flour, 1 small cooked potato (approx. 50 g), 1 tbsp oil and salt and knead for 2 min./kneading level to a smooth dough.

Let the dough rise

Put the dough in a bowl, cover and let rise in a warm place for about 30 minutes.

Prepare tomato sauce

Put 125 g chunky tomatoes, salt and pepper in the mixing bowl and stir for 5 sec./speed 3.

Top and bake pizza

Roll out the dough on a floured work surface to a circle (20-25 cm Ø) approx. 5 mm thick. Place on a baking sheet lined with baking paper and spread with the tomato sauce. Cut 1 tomato into slices and distribute on the pizza together with 150 g mozzarella in slices and 8 olives. Bake on the lower rack in a preheated oven (electric oven: 225 °C/ gas: level 4) for 15-20 minutes.

Garnish pizza

Wash 3-4 sprigs of basil, pat dry and pluck off the leaves. Remove the pizza from the oven, top with 3 slices of smoked ham and basil and serve immediately.
