Description

These savory waffles with beetroot are a real eye-catcher on any brunch buffet! I especially like to make them in autumn, when beetroot is in season. The combination of the slightly sweet vegetable, the spicy Parmesan and the fresh horseradish dip is simply unbeatable. The waffles are quick to prepare and can be prepared well in advance. They are always a hit with me, especially when I sprinkle fresh chives over them. An absolute must for anyone who likes something a little different!

Ingredients (13 ingredients)

  • 1 piece Egg (size L)
  • 1 tsp Salt
  • 100 g Sour cream
  • 75 ml Milk
  • 1 tsp Cream of tartar baking powder
  • 50 g Butter
  • 150 g Whole wheat flour
  • 100 g Carrots
  • 4 tbsp Grated Parmesan
  • 125 ml Cremefine for whipping
  • 150 g Greek yogurt
  • 3 tsp Prepared horseradish
  • 0.5 Bd. Chives

Preparation (8 steps)

Whisk egg white until stiff

Thermomix® Setting
3 min/Speed 3.5

Separate the egg. Put the egg white in the mixing bowl and whisk with 1 tsp salt for 3 min./speed 3.5 with the butterfly. Transfer and set aside.

Prepare dough

Thermomix® Setting
20 sec/Speed 3

Put the egg yolk, 100 g sour cream, 75 ml milk, 1 tsp cream of tartar baking powder and 50 g butter in the mixing bowl and stir for 20 sec./speed 3.

Add flour and vegetables

Thermomix® Setting
10 sec/Speed 3

Add 150 g whole wheat flour and stir in for 15 sec./speed 4. Peel 100 g carrots, grate finely and add to the mixing bowl together with 4 tbsp grated Parmesan. Stir in for 10 sec./speed 3.

Fold in egg white

Carefully fold the previously whisked egg white into the batter with a spatula.

Bake waffles

Preheat a heart-shaped waffle iron and spread 1/4 of the waffle batter evenly on the waffle iron. Close it and bake 4 waffles each until golden brown. Let cool slightly on a wire rack and divide into individual hearts.

Prepare dip

Thermomix® Setting
2 min/Speed 3.5

Put 125 ml Cremefine in the mixing bowl and whisk with the butterfly for 2 min./speed 3.5 until stiff. Transfer.

Refine dip

Add 150 g Greek yogurt and 3 tsp prepared horseradish to the whipped Cremefine and carefully fold in with a spatula. Season with salt and pepper.

Arrange

Slice the beetroot into thin slices and arrange on the heart waffles with the horseradish cream and 0.5 bunch of chives cut into fine rolls.
