These whole wheat oat waffles are a delightful and wholesome way to start your day! I've been making these for my family for years, and they always disappear quickly. The combination of whole wheat pastry flour, oat flour, and a touch of sugar creates a slightly nutty and satisfying flavor. They're perfect for a weekend brunch or a special weekday breakfast. Top them with your favorite fruits, syrup, or a dollop of yogurt for a truly delicious treat. These waffles are hearty enough to keep you full and energized until lunchtime!

Ingredients (10 ingredients)

  • 0.5 cup whole wheat pastry flour
  • 0.5 cup all-purpose flour
  • 1 cup oat flour
  • 0.25 cup white sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 2 piece eggs, separated
  • 1.5 cup milk
  • 2 tablespoon canola oil
  • 1 teaspoon vanilla extract

Preparation (6 steps)

Combine dry ingredients

Add ½ cup whole wheat pastry flour, ½ cup all-purpose flour, 1 cup oat flour, ¼ cup white sugar, 1 tablespoon baking powder, and ½ teaspoon salt to the Thermomix bowl. Mix for 10 Sec./Stufe 4 to combine.

Combine wet ingredients

Add 2 egg yolks, 1 ½ cups milk, 2 tablespoons canola oil, and 1 teaspoon vanilla extract to the Thermomix bowl. Mix for 10 Sec./Stufe 3 to combine.

Beat egg whites

In a separate, non-plastic bowl, beat 2 egg whites with an electric mixer until soft peaks form. This step cannot be done in the Thermomix.

Combine wet and dry ingredients

Pour the wet ingredients from the Thermomix bowl into the bowl with the dry ingredients. Mix until just combined. Do not overmix.

Fold in egg whites

Gently fold the beaten egg whites into the batter, retaining as much volume as possible. Let the batter stand for about 5 minutes to thicken slightly.

Bake waffles

Preheat a waffle maker according to the manufacturer's directions. Pour ½ cup of batter, or the amount recommended by the manufacturer, onto the waffle maker. Close the lid and bake until the waffle is browned and crisp, about 2 to 4 minutes. This step cannot be done in the Thermomix.
