Description

This hearty potato broccoli casserole from the Thermomix® is a substantial main course with potatoes, broccoli, mushrooms and cheese. Preparation takes about 65 minutes and yields 6 servings. Ideal for a warming family meal on cold days or as a vegetarian alternative. Diced bacon can be added optionally.

Ingredients (13 ingredients)

  • 1000 g Potatoes, firm cooking
  • 1 Kopf Broccoli
  • 2 Stück Red onions
  • 250 g Mushrooms
  • 200 g Tomatoes
  • 250 g Cheese
  • 1 EL Olive oil
  • 80 g Diced bacon
  • 200 g Cream
  • 250 ml Vegetable stock
  • 2 EL Cream cheese
  • nach Geschmack Salt
  • nach Geschmack Pepper

Preparation (8 steps)

Prepare potatoes

Wash 1 kg firm cooking potatoes, peel and place in a pot. Cover with water, add salt and cook for 20 minutes. Then drain, let cool and cut into slices.

Prepare broccoli

Divide 1 head of broccoli into florets and blanch in boiling salted water for 5 minutes. Then drain.

Chop onions

Place 2 red onions, halved, in the mixing bowl and chop for 3 sec./speed 5.

Sauté onions, bacon and mushrooms

3 min/248°F/Speed 1 120

Add 1 tbsp olive oil and 80 g diced bacon to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1. Add 250 g sliced mushrooms and sauté for another 3 min./120°C/speed 1.

Prepare sauce

5 min/212°F/Speed 2 100

Add 250 ml vegetable stock and 200 g cream to the mixing bowl and simmer for 5 min./100°C/speed 2.

Refine sauce

Thermomix® Setting
20 sec/Speed 3

Add 2 tbsp cream cheese and stir in for 20 sec./speed 3. Season with salt and pepper.

Layer casserole

Preheat the oven to 200 degrees top and bottom heat. Place potato slices, broccoli florets and 200 g quartered tomatoes in a baking dish. Spread the sauce evenly over it. Add 250 g sliced cheese on top.

Bake casserole

Bake the casserole in the preheated oven for 20 minutes until the cheese is golden brown.
