Description

This Jackfruit Goulash is a hearty and vegan delight that warms you up, especially in the cold season. The jackfruit, with its meat-like consistency, is marinated overnight and then processed with aromatic spices and red wine into a hearty goulash. I like to make this recipe again and again because it is so easy to prepare and yet tastes incredibly delicious. It is perfect for a cozy dinner with friends or family. Red cabbage and potato dumplings go wonderfully with it! The preparation time is a bit longer, but most of the time the jackfruit is marinating in the refrigerator.

Ingredients (20 ingredients)

  • 800 g Young Jackfruit
  • 3 tbsp Vegetable Oil
  • 3 tbsp Agave Syrup
  • 2 tbsp Tomato Paste
  • 1 tbsp Paprika Powder, Mild
  • 1 tbsp Paprika Powder, Smoked
  • Oil for Frying
  • 3 tbsp Flour
  • 3 piece Onions
  • 2 clove Garlic
  • 2 tbsp Tomato Paste
  • 2 piece Carrots
  • 1 piece Bell Pepper
  • 250 ml Red Wine
  • 200 ml Vegetable Broth
  • 5 g Dried Mushrooms
  • 3 piece Bay Leaves
  • Paprika Powder, Mild
  • Salt
  • Pepper

Preparation (6 steps)

Prepare and marinate jackfruit

Place the jackfruit in a sieve, rinse well under cold water and drain. In a bowl, mix jackfruit, vegetable oil, agave syrup, tomato paste, mild and smoked paprika powder. Marinate the jackfruit in the refrigerator overnight.

Fry jackfruit

Heat a dash of oil in a pan over high heat. Fry the marinated jackfruit and flour in it for about 10 minutes. Stir occasionally and loosen the sediment with a wooden spoon. Remove the jackfruit from the pan and set aside.

Prepare vegetables

Cut the onions into coarse wedges. Roughly crush the garlic. Cut carrots and bell pepper into coarse pieces. Grind the dried mushrooms into powder in a mortar or blender.

Sauté onions and garlic

If necessary, add some oil to the mixing bowl again. Add the onions, garlic and tomato paste and chop for 3 sec./speed 5. Then sauté for 3 min./120°C/speed 1.

Simmer goulash

Add jackfruit, carrots, bell pepper, mushroom powder, bay leaves, paprika powder, salt, pepper, red wine and vegetable broth to the mixing bowl. Simmer for 40 min./100°C/speed 1 reverse.
