Description

These chicken tinga tacos are an explosion of Mexican flavor in every bite. The tinga, with its smoky and slightly spicy touch thanks to the chipotle chili, is perfectly complemented by the freshness of the green sauce. Preparing them in the Thermomix® makes the process much easier, allowing you to enjoy an authentic homemade meal in no time. Ideal for a casual dinner with friends or a themed party, these tacos are always a success. The combination of textures and flavors will transport you directly to Mexico. Ingredients (16 ingredients)

  • 2 piece Chicken breast
  • 4 clove Garlic cloves
  • 2 piece White onion
  • 4 piece Crushed tomato
  • 4 cucharaditas Chipotle chili
  • 1 pinch Ground cinnamon
  • Water
  • Salt
  • 18 piece Corn tortillas
  • 2 piece Mexican green tomatillos
  • 0.5 piece Avocado
  • 0.25 piece Italian green pepper
  • 0.25 piece Spring onion
  • 2 piece Lime juice
  • 15 hojitas Fresh coriander
  • 200 ml Chicken broth

Preparation (10 steps)

Chicken in the Thermomix

Thermomix® Setting
25 min/Varoma/Speed 1 Varoma

Place the chicken breasts in the Varoma container. Add 500 ml of water to the Thermomix bowl. Place the Varoma in its position and program 25 Min./Varoma/Stufe 1. Once cooked, remove the chicken and reserve the cooking water.

Shred the chicken

Once the chicken is cool enough to handle, shred it into thin strands. Reserve.

Chop garlic and onion

Thermomix® Setting

Put the garlic cloves in the Thermomix bowl and chop 3 Sek./Stufe 7. Remove and reserve.

Chop onion

Thermomix® Setting
3 sec/Speed 5

Put the white onions in the Thermomix bowl and chop 3 Sek./Stufe 5. Remove and reserve.

Base sofrito

Thermomix® Setting
15 min/248°F/Speed 1 120

Add a splash of olive oil to the Thermomix bowl. Add the chopped garlic and onion. Sauté for 15 Min./120°C/Stufe 1.

Add tomato and spices

Thermomix® Setting
15 min/212°F/Speed 2 100

Add the crushed tomato, the teaspoons of chipotle chili and the pinch of ground cinnamon to the Thermomix bowl. Mix well and cook for 15 Min./100°C/Stufe 2.

Incorporate the chicken

Thermomix® Setting
10 min/212°F/Linkslauf Speed 1 100 Reverse

Add the shredded chicken strands and the chicken broth (or reserved cooking water) to the Thermomix bowl. Cook for 10 Min./100°C/Linkslauf Stufe 1 to integrate the flavors.

Green sauce

Thermomix® Setting
30 sec/Speed 8

Put the Mexican green tomatillos, avocado, Italian green pepper, spring onion, lime juice and fresh coriander leaves in the Thermomix bowl. Chop for 30 Sek./Stufe 8. Correct the salt if necessary.

Heat tortillas

Heat the corn tortillas in a hot pan or in the microwave.

Assemble the tacos

Fill the hot tortillas with the chicken tinga and the green sauce. Serve with a splash of lime juice to taste.
