Description

This chipotle adobo chicken is a Mexican dish full of flavor and with a spicy touch that makes it irresistible. The combination of chipotle with orange juice gives it a balanced sweetness and acidity. I have been preparing it for years and it is always a success at home. It is perfect for a family meal or a dinner with friends. It can be accompanied with white rice and hot corn tortillas. Go ahead and try it, you will love it!

Ingredients (16 ingredients)

  • 1 kilogramo chicken in pieces or fajitas
  • 2 piece tomatoes
  • 2 dientes garlic
  • 1 trozo onion
  • 1 piece clean ancho chili
  • 1 can chipotle chiles
  • 1 cup hot water
  • 300 mililitros orange juice
  • 3 clavos clove
  • 1 cucharadita oregano
  • 1 pinch cumin
  • salt
  • pepper
  • 1 pinch garlic powder
  • 1 cucharada sopera vegetable oil
  • 1 cucharada sopera butter

Preparation (7 steps)

Roast the ingredients

Place the tomatoes, garlic cloves, the piece of onion and the clean ancho chili in a pan and roast until they are lightly toasted. Remove from the heat and reserve.

Soak the ancho chili

In a container, place the toasted ancho chili and cover with a cup of hot water. Let stand for 15 minutes to soften.

Cook the chicken

In a large skillet, heat the vegetable oil and butter over medium heat. Add the chicken in pieces or fajitas, season with garlic powder, salt, pepper and dried oregano. Cook, stirring constantly, until golden brown on all sides. Remove the chicken from the pan and reserve.

Prepare the sauce

Place the soaked ancho chili (with a little of the soaking water), the tomatoes, the piece of onion, the toasted garlic cloves, the canned chipotle chiles, the cloves and the cumin in the Thermomix glass. Crush 4 Min./Stufe 10.

Cook the sauce

Pour the sauce from the Thermomix glass over the chicken in the pan. If you prefer a finer sauce, pass it through a strainer before adding it to the chicken.

Add orange juice and cook

Add the orange juice to the chicken and sauce. Season with a little more salt and pepper to taste. Cook over medium-low heat for 10 Min./100°C/Sanftrührstufe.

The ancho chili, previously cleaned of veins and seeds to control the spice, adds an earthy and fruity touch. The chipotle chiles in adobo, undisputed protagonists, offer the characteristic smoky and spicy flavor. The orange juice, ideally freshly squeezed, balances the intensity of the chipotle with its acidity and natural sweetness. The spices, such as cloves, oregano and cumin, add depth and complexity to the adobo. To prepare this dish in the Thermomix®, it is important to follow some tips. By roasting the tomatoes, garlic, onion and ancho chili, their flavors are intensified and their liquefaction is facilitated. Soaking the ancho chili in hot water is crucial to soften it and allow it to release its flavors. When crushing the ingredients in the Thermomix®, make sure that the sauce is completely homogeneous. If you prefer a finer texture, you can pass the sauce through a strainer before adding it to the chicken.
