Description

Make seitan yourself? Sounds complicated, but it's not at all! With the Thermomix® it's easier than you think. This recipe is perfect for anyone looking for a delicious and protein-rich alternative to meat. The seitan is cooked in a spicy broth that gives it a great taste. I like to use it in vegetable stir-fries or as a base for a vegetarian chili. It is important to give the seitan enough time to soak after cooking so that it can properly absorb the taste of the broth. An absolute must for vegan cuisine!

Ingredients (8 ingredients)

  • 500 g Wheat flour
  • 300 ml Water
  • 1 piece Onion
  • 2 clove Garlic
  • 2 tbsp Oil
  • 1 l Vegetable broth
  • 2 tbsp Tomato paste
  • Spice(s) suitable for the later intended use of the seitan

Preparation (8 steps)

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Put 500 g wheat flour and 300 ml water into the mixing bowl and knead into a dough for 2 min./kneading setting. Place the dough in a bowl and cover with lukewarm water. Let rest for 30 minutes.

Prepare broth

Peel and halve 1 onion and place in the mixing bowl. Chop for 3 sec./speed 5. Add 2 cloves of garlic and chop for a further 3 sec./speed 7. Use the spatula to push everything down from the edge.

Sauté onions and garlic

3 min/248°F/Speed 1 120

Add 2 tbsp oil and sauté for 3 min./120°C/speed 1.

Cook broth

Thermomix® Setting
10 min/212°F/Speed 1 100

Add 1 liter vegetable broth and 2 tbsp tomato paste. Season with spices of your choice and cook for 10 min./100°C/speed 1. Then transfer the broth.

Wash dough

Thoroughly knead the dough in the water until the water turns milky. Pour the liquid through a sieve. Repeat this process about 5 times until the water remains clear and the dough has a spongy consistency. Rinse and squeeze the dough well.

Cook seitan

Cut the seitan into cubes or slices and add to the prepared broth. Bring the broth to a boil for 5 min./100°C/speed 1. Then let it steep for 30 min./90°C/speed 1.

Let seitan steep

30 min/194°F/Speed 1 90

Let the seitan steep for another 30 min./90°C/speed 1.

Store seitan

Place the seitan in an airtight container and cover with enough broth. Let it steep in the refrigerator for at least 2 days.
