Description

This creamy chicken casserole is a family favorite! Cubed chicken breast is combined with crunchy water chestnuts, pimento peppers, and sliced almonds in a light mayonnaise sauce. It's seasoned with celery seed and lemon juice for a bright, savory flavor. Topped with shredded cheddar cheese and crispy fried onion rings, this bake is pure comfort food. Perfect for a weeknight dinner or a potluck, it's easy to prepare and always a crowd-pleaser. You can easily adapt it by adding other vegetables or using different types of cheese. Enjoy!

Ingredients (11 ingredients)

  • 1 tbsp vegetable oil
  • 1.5 pounds skinless, boneless chicken breast halves - cubed
  • 1 cup light mayonnaise
  • 8 ounce water chestnuts, drained and chopped
  • 2 ounce pimento peppers, drained and chopped
  • 0.5 cups sliced almonds
  • 1.5 tsp celery seed
  • 2 tbsp lemon juice
  • garlic salt
  • 1 cup shredded Cheddar cheese
  • 2.8 ounce French-fried onion rings

Preparation (5 steps)

Preheat oven and prepare casserole dish

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish. Set aside.

Cook the chicken

Heat the vegetable oil in a skillet over medium heat. Place chicken in skillet, and cook 10 minutes, or until juices run clear. Drain, and transfer to the prepared casserole dish.

Combine ingredients

In the casserole dish, mix the cooked chicken with mayonnaise, water chestnuts, pimentos, almonds, celery seed, and lemon juice. Season with garlic salt to taste. Stir until well combined.

Add cheese and onion rings

Layer the chicken mixture with shredded Cheddar cheese, and top with French-fried onion rings.

Bake the casserole

Bake 30 minutes in the preheated oven, until cheese is melted and onion rings are lightly browned. If rings start to get too brown, put foil on casserole or lower oven rack. Watch carefully, or onion rings will burn.
