Description

These homemade huaraches with chicken and cactus pads are a Mexican delight that you can easily prepare at home with your Thermomix®. The soft and slightly moist corn dough serves as a base for a juicy and flavorful chicken stew, accompanied by cooked cactus pads and refried beans. A perfect dish to share with family or friends, ideal for a brunch or a hearty meal. Dare to try this recipe and enjoy an authentic Mexican feast! Ingredients (13 ingredients)

  • 300 gramos corn flour
  • 1 pinch salt
  • 1.5 tazas warm water
  • 1 cup chopped cooked cactus pads
  • 1 cup refried beans
  • 300 gramos chicken breast cut into cubes
  • 1 pinch salt
  • 1 pinch pepper to taste
  • 0.5 piece chopped onion
  • 1 piece chopped tomato
  • 1 piece chopped serrano pepper
  • 1 chorro vegetable oil
  • 1 puñado shredded cheese to taste

Dough preparation

Thermomix® Setting

In the Thermomix bowl, add 300 grams of corn flour, a pinch of salt and 1 cup of warm water. Mix for 2 Min./Speed 4 until you get a smooth and slightly moist dough. If necessary, add a little more warm water.

Form the huaraches

Remove the dough from the Thermomix and divide into portions of approximately 50 grams. Form balls with each portion and, with the help of a rolling pin, spread them until you get an oval shape of about 5 mm thick. Reserve.

Cook the huaraches

In a hot griddle, place each huarache and cook each side for 2-3 minutes or until they are lightly toasted. Reserve.

Preparation of the chicken stew

Thermomix® Setting

In the Thermomix bowl, add ½ chopped onion and 1 chopped tomato. Chop for 3 Sec./Speed 5. Then, add a splash of vegetable oil and sauté for 5 Min./120°C/Speed 1.

Cook the chicken

Thermomix® Setting
8 min/Varoma/Velocidad 1 Varoma

Add 300 grams of chicken breast cut into cubes, a pinch of salt, pepper to taste and 1 chopped serrano pepper to the Thermomix bowl. Cook for 8 Min./Varoma/Speed 1.

Assembly of the huaraches

Place a huarache in a pan or griddle with a little oil. Spread a portion of refried beans (approximately ¼ cup) and add ¼ cup of chopped cooked cactus pads.

Add the stew and serve

Add a portion of the chicken stew (approximately ¼ of the total) over the cactus pads and beans. Sprinkle shredded cheese to taste. Serve immediately with sauce to taste.
